Ve form\u011b hemoglobinu je 65\u201370 % celkov\u00e9ho \u017eeleza v na\u0161em t\u011ble. Ve svalech je \u017eelezo ve form\u011b <span class='tooltipsall tooltipsincontent classtoolTips227'>myoglobinu<\/span>. Dal\u0161\u00ed formy \u017eeleza se naz\u00fdvaj\u00ed <span class='tooltipsall tooltipsincontent classtoolTips203'>transferin<\/span> a <span class='tooltipsall tooltipsincontent classtoolTips274'>feritin<\/span>.<\/p>\n<p>&nbsp;<\/p>\n<p>Vst\u0159eb\u00e1v\u00e1n\u00ed \u017eeleza z potravy ovliv\u0148uje jeho forma v&nbsp;potravin\u011b, ale i ostatn\u00ed l\u00e1tky v potrav\u011b, kter\u00e9 se \u017eelezem reaguj\u00ed. Vst\u0159eb\u00e1v\u00e1n\u00ed zhor\u0161uj\u00ed t\u0159eba soli v\u00e1pn\u00edku (ml\u00e9ko a ml\u00e9\u010dn\u00e9 v\u00fdrobky), fosforu (kolov\u00e9 n\u00e1poje, ryby, taven\u00e9 s\u00fdry), d\u00e1le t\u0159eba l\u00e1tky obsa\u017een\u00e9 v \u010daji a obilnin\u00e1ch. Chceme-li \u017eelezo z&nbsp;potravy dob\u0159e vyu\u017e\u00edt, nem\u011bli bychom potraviny bohat\u00e9 na \u017eelezo kombinovat pr\u00e1v\u011b t\u0159eba s&nbsp;colou nebo ml\u00e9kem.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Nedostatek i nadbytek \u017eeleza n\u00e1m \u0161kod\u00ed<\/strong><\/p>\n<p>P\u0159\u00ed\u010dinou nedostatku \u017eeleza je bu\u010f jeho n\u00edzk\u00fd p\u0159\u00edjem v&nbsp;potrav\u011b, <span class='tooltipsall tooltipsincontent classtoolTips18'>\u0161patn\u00e9 vst\u0159eb\u00e1v\u00e1n\u00ed \u017eeleza<\/span> \u010di nadm\u011brn\u00e9 ztr\u00e1ty (krv\u00e1cen\u00ed, porod, kojen\u00ed). Pokud m\u00e1me \u017eeleza nedostatek, na\u0161e t\u011blo zv\u00fd\u0161\u00ed a\u017e 10x svou schopnost ho vst\u0159eb\u00e1vat a z\u00e1rove\u0148 za\u010dne \u010derpat \u017eelezo z rezervn\u00edch z\u00e1sob. Po vy\u010derp\u00e1n\u00ed z\u00e1sob se za\u010dne nedostatek \u017eeleza projevovat p\u0159edev\u0161\u00edm chudokrevnost\u00ed.<\/p>\n<p>I nadbytek \u017eeleza je ale \u0161kodliv\u00fd. Doch\u00e1z\u00ed k&nbsp;n\u011bmu p\u0159i <span class='tooltipsall tooltipsincontent classtoolTips20'>poruch\u00e1ch metabolismu \u017eeleza<\/span>. \u017delezo se pak ukl\u00e1d\u00e1 v n\u011bkter\u00fdch org\u00e1nech a po\u0161kozuje je. Ohro\u017eena jsou hlavn\u011b j\u00e1tra,&nbsp;(cirh\u00f3za),&nbsp;slinivka b\u0159i\u0161n\u00ed&nbsp;(cukrovka),&nbsp;srdce, klouby atd..&nbsp; Typick\u00e9 je bronzov\u00e9 zbarven\u00ed k\u016f\u017ee. V&nbsp;t\u011b\u017ek\u00fdch p\u0159\u00edpadech (z\u00edskan\u00e1 nebo vrozen\u00e1 hemochromat\u00f3za) se objevuje zv\u00fd\u0161en\u00e1 pigmentace k\u016f\u017ee, porucha funkce pohlavn\u00edch \u017el\u00e1z (pravd\u011bpodobn\u011b pro posti\u017een\u00ed podv\u011bsku mozkov\u00e9ho s&nbsp;n\u00e1slednou poruchou regulace tvorby pohlavn\u00edch <span class='tooltipsall tooltipsincontent classtoolTips265'>hormon\u016f<\/span>), posti\u017een\u00ed srdce (m\u016f\u017ee v\u00e9st a\u017e k&nbsp;srde\u010dn\u00edmu selh\u00e1n\u00ed).<\/p>\n<p>Zaj\u00edmavost: \u010castou p\u0159\u00ed\u010dinou nadbytku \u017eeleza je v n\u011bkter\u00fdch oblastech Afriky pit\u00ed piva va\u0159en\u00e9ho v ocelov\u00fdch n\u00e1\u00addob\u00e1ch.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>N\u00e1roky na mno\u017estv\u00ed \u017eeleza se m\u011bn\u00ed<\/strong><\/p>\n<p>\u017deleza m\u00e1me v&nbsp;na\u0161em b\u011b\u017en\u00e9m \u010desk\u00e9m j\u00eddeln\u00ed\u010dku obvykle dostatek, proto\u017ee je u n\u00e1s zvykem j\u00edst hodn\u011b \u010dasto maso a masn\u00e9 v\u00fdrobky. Ale omyl \u2013 do v\u00fdpo\u010dt\u016f se v\u011bdc\u016fm vloudila chyba a ve skute\u010dnosti m\u00e1 \u0161pen\u00e1t 10x m\u00e9n\u011b \u017eeleza, ne\u017e se ud\u00e1valo \u2013 pouze 2,71mg Fe\/100g \u0161pen\u00e1tu.<\/p>\n<p>Skute\u010dn\u011b bohat\u00fdmi zdroji hemov\u00e9ho \u017eeleza jsou j\u00e1tra, maso a vejce. Obsah hemov\u00e9ho \u017eeleza je v&nbsp;t\u011bchto potravin\u00e1ch (krom\u011b jater) ni\u017e\u0161\u00ed ne\u017e obsah non-hemov\u00e9ho \u017eeleza v&nbsp;rostlinn\u00fdch potravin\u00e1ch, jeho vyu\u017eitelnost na\u0161\u00edm t\u011blem je ale daleko lep\u0161\u00ed.
