Houby maj\u00ed v na\u0161\u00ed kuchyni velmi \u0161irok\u00e9 vyu\u017eit\u00ed, daj\u00ed se va\u0159it, sma\u017eit, zap\u00e9kat, p\u0159id\u00e1vat do zeleninov\u00fdch \u010di t\u011bstovinov\u00fdch sal\u00e1t\u016f, zava\u0159ovat do octa \u010di do soli, su\u0161it a skladovat k pozd\u011bj\u0161\u00edmu vyu\u017eit\u00ed.<\/p>\n<p>V\u00fdborn\u00e9 jsou jako sou\u010d\u00e1st pol\u00e9vek, om\u00e1\u010dek, gul\u00e1\u0161\u016f, pod maso, ale tak\u00e9 jako \u0159\u00edzky. Houby jsou kulin\u00e1\u0159sky zaj\u00edmav\u00e9 d\u00edky sv\u00e9mu typick\u00e9mu aroma, i proto se \u010dasto pou\u017e\u00edvaj\u00ed nap\u0159\u00edklad v diet\u00e1ch, kde je nutno omezit s\u016fl, nebo\u0165 dod\u00e1vaj\u00ed neslan\u00fdm pokrm\u016fm v\u00fdraznou chu\u0165. Zaj\u00edmav\u00fd je i fakt, \u017ee houby jsou pom\u011brn\u011b energeticky chud\u00e9 a nemus\u00edme se tedy b\u00e1t zbyte\u010dn\u00fdch kalori\u00ed nav\u00edc (z\u00e1le\u017e\u00ed ov\u0161em na zp\u016fsobu \u00fapravy.<\/p>\n<p>Nev\u00fdhodou je t\u011b\u017ek\u00e1 stravitelnost n\u011bkter\u00fdch hub, kter\u00e1 se \u010dasto zvy\u0161uje i tepelnou \u00fapravou. Stravitelnost zv\u00fd\u0161\u00edme ji\u017e t\u00edm, \u017ee je nakr\u00e1j\u00edme nebo i nasek\u00e1me na men\u0161\u00ed kousky. Houby p\u0159i \u00faprav\u011b dob\u0159e osol\u00edme a dostate\u010dn\u011b dlouho va\u0159\u00edme, dus\u00edme nebo sma\u017e\u00edme, podle mo\u017enosti i okysel\u00edme citr\u00f3nem, octem. I konzerva\u010dn\u00ed metody p\u0159isp\u00edvaj\u00ed k v\u011bt\u0161\u00ed stravitelnosti hub, nap\u0159. ml\u00e9\u010dn\u00e9 kva\u0161en\u00ed nebo nakl\u00e1d\u00e1n\u00ed do soli \u010di do octov\u00e9ho n\u00e1levu. Su\u0161en\u00e9 houby je vhodn\u00e9\u00a0 p\u0159ed \u00fapravou alespo\u0148 na 15 minut namo\u010dit).<\/p>\n<p>Z\u00e1kladn\u00ed informace o slo\u017een\u00ed jedl\u00fdch hub a mo\u017en\u00fdch rizic\u00edch jejich konzumace z hlediska\u00a0zdravotn\u00ed bezpe\u010dnosti jsou k nahl\u00e9dnut\u00ed <a href=\"https:\/\/viscojis.cz\/teens\/137\/\" target=\"_blank\" rel=\"noopener noreferrer\">zde<\/a>. O jedovat\u00fdch houb\u00e1ch a otrav\u00e1ch z nich se v\u00edce dozv\u00edte <a href=\"https:\/\/viscojis.cz\/teens\/62\/\" target=\"_blank\" rel=\"noopener noreferrer\">zde<\/a>.<\/p>\n<p>\u00a0<\/p>\n<p><strong>N\u011bkter\u00e9 na\u0161e jedl\u00e9 houby<\/strong><\/p>\n<p><strong>Voln\u011b rostouc\u00ed houby:<\/strong><\/p>\n<ul>\n<ul>\n<li><em><strong>Bedla vysok\u00e1 <\/strong><\/em>(Lepiota procera) \u2013 roste ve v\u0161ech typech les\u016f nej\u010dast\u011bji ve vysok\u00e9 tr\u00e1v\u011b a \u010dasto ve skupin\u00e1ch, klobouk mlad\u00fdch hub je uzav\u0159en\u00fd, m\u016f\u017ee p\u0159ipom\u00ednat vejce, postupn\u011b se rozev\u00edr\u00e1 do tvaru de\u0161tn\u00edku o pr\u016fm\u011bru a\u017e 30 cm i v\u00edce. Klobouk m\u00e1 dole b\u00edl\u00e9 lupeny, na vrchu \u0161upinky. T\u0159e\u0148 (lidov\u011b \u0159e\u010deno \u201enoha\u201c) je vysok\u00fd, dut\u00fd, v polovin\u011b dopln\u011bn\u00fd prstencem,\u00a0 pro konzumaci se t\u0159e\u0148 nehod\u00ed.\u00a0 Osoby neznal\u00e9 n\u011bkdy sb\u00edraj\u00ed m\u00edsto bedel n\u011bkter\u00e9 muchom\u016frky, i kdy\u017e spr\u00e1vn\u00e9mu houba\u0159i p\u0159ijde takov\u00e1to z\u00e1m\u011bna nemo\u017en\u00e1.\u00a0 Hod\u00ed se na obalov\u00e1n\u00ed, pln\u011bn\u00ed a zap\u00e9k\u00e1n\u00ed, lze je su\u0161it a mlad\u0161\u00ed kousky i\u00a0 zava\u0159ovat.<\/li>\n<li><em><strong>H\u0159ib \u017elutomas\u00fd \u010dili babka<\/strong><\/em> (Boletus chrysenteron)- roste ve v\u0161ech typech les\u016f nej\u010dast\u011bji ve skupin\u00e1ch. Klobouk je v ml\u00e1d\u00ed sametov\u00fd polokulovit\u00fd, v dosp\u011blosti charakteristicky popraskan\u00fd, klobouk m\u016f\u017ee b\u00fdt v\u00a0 r\u016fzn\u00fdch odst\u00ednech hn\u011bd\u00e9. Du\u017enina je m\u011bkk\u00e1, na \u0159ezu modr\u00e1. \u010casto \u010derviv\u00ed, rychle plesniv\u00ed. Z\u00e1m\u011bna s jedovatou houbou je vysoce nepravd\u011bpodobn\u00e1. Mlad\u00e9 je\u0161t\u011b tuh\u00e9 plodnice se hod\u00ed na zava\u0159en\u00ed \u010di na su\u0161en\u00ed, star\u0161\u00ed a m\u011bk\u010d\u00ed houby vyu\u017eijete do pol\u00e9vek, om\u00e1\u010dek, sma\u017eenice, na su\u0161en\u00ed a zava\u0159ov\u00e1n\u00ed se ale u\u017e nehod\u00ed.<\/li>\n<li><strong><em>H\u0159ib hn\u011bd\u00fd \u010dili suchoh\u0159ib <\/em><\/strong>(Boletus badius) \u2013\u00a0 roste hlavn\u011b v jehli\u010dnat\u00fdch, ale i listnat\u00fdch les\u00edch v mechu, mezi spadan\u00fdm d\u0159evem a u pa\u0159ez\u016f. Suchoh\u0159ib je pevn\u00e1 masit\u00e1 such\u00e1 houba. Klobou\u010dek je hladk\u00fd tmav\u011b hn\u011bd\u00fd. Po rozkrojen\u00ed slab\u011b modr\u00e1. M\u00e1lo \u010derviv\u00ed. Z\u00e1m\u011bna je teoreticky mo\u017en\u00e1 s h\u0159ibem \u017elu\u010dn\u00edkem \u010dili \u201eho\u0159\u010d\u00e1kem\u201c, kter\u00fd ov\u0161em po rozkrojen\u00ed r\u016f\u017eov\u00ed a i trubky vespod klobou\u010dku jsou nar\u016f\u017eov\u011bl\u00e9.\u00a0 Suchoh\u0159ib je velmi chutn\u00fd. Hod\u00ed se ke v\u0161em mo\u017en\u00fdm \u00faprav\u00e1m v\u010detn\u011b nakl\u00e1d\u00e1n\u00ed a su\u0161en\u00ed.<\/li>\n<li><strong><em>\u201ePrav\u00e9 h\u0159iby\u201c &#8211; zejm\u00e9na h\u0159ib dubov\u00fd a smrkov\u00fd<\/em><\/strong> ( Boletus aestivalis, B. bulbosus) \u2013 pat\u0159\u00ed mezi nejv\u00edce cen\u011bn\u00e9 houby. H\u0159ib dubov\u00fd roste v listnat\u00fdch les\u00edch, h\u0159ib smrkov\u00fd hlavn\u011b v mlad\u00fdch smrkov\u00fdch les\u00edch, najdeme jej ale i ve sm\u00ed\u0161en\u00fdch a listnat\u00fdch les\u00edch. Klobouk m\u00e1 sv\u011btlej\u0161\u00ed barvu, trubky jsou b\u00edl\u00e9 \u010di sv\u011btle \u017elut\u00e9 a\u017e \u017elutozelen\u00e9. Jedn\u00e1 se o pevn\u00e9 masit\u00e9 houby, kter\u00e9 ov\u0161em snadno \u010derviv\u00ed. Maj\u00ed vynikaj\u00edc\u00ed chu\u0165. Hod\u00ed se ke v\u0161em mo\u017en\u00fdm kulin\u00e1\u0159sk\u00fdm \u00faprav\u00e1m.\u00a8<\/li>\n<li><em><strong>Li\u0161ka obecn\u00e1<\/strong><\/em> (Cantharellus cibarius) \u2013\u00a0 roste v jehli\u010dnat\u00fdch i listnat\u00fdch les\u00edch. Cel\u00e1 plodnice je zabarvena do \u017eluta, ale m\u016f\u017ee b\u00fdt b\u011blav\u00e1. Li\u0161ka je sp\u00ed\u0161e men\u0161\u00ed velmi chutn\u00e1 houba,\u00a0m\u00e1lokdy \u010derviv\u00ed, d\u00edky pevn\u00e9 <span class='tooltipsall tooltipsincontent classtoolTips180'>konzistenci<\/span> se hod\u00ed na zava\u0159ov\u00e1n\u00ed, ide\u00e1ln\u00ed je do pol\u00e9vek. Z\u00e1m\u011bna s jedovatou houbou nen\u00ed pravd\u011bpodobn\u00e1. Nehod\u00ed se na su\u0161en\u00ed. Je d\u016fle\u017eit\u00e9 ji \u0159\u00e1dn\u011b podusit, jinak z\u016fstane tuh\u00e1 a t\u011b\u017eko straviteln\u00e1.<\/li>\n<li><strong><em>Muchom\u016frka r\u016f\u017eovka<\/em><\/strong> (Amanita rubescens) \u010dili r\u016f\u017eovka nebo tak\u00e9 mas\u00e1k \u2013 roste hojn\u011b v listnat\u00fdch i jehli\u010dnat\u00fdch les\u00edch. T\u0159e\u0148 je v dosp\u011blosti vysok\u00fd, v ml\u00e1d\u00ed n\u00edzk\u00fd, plodnice je v ml\u00e1d\u00ed kulovit\u00e1, pozd\u011bji se klobouk rozev\u00edr\u00e1 do tvaru de\u0161tn\u00edku. Klobouk je nar\u016f\u017eov\u011bl\u00fd a\u017e r\u016f\u017eovohn\u011bd\u00fd pokryt\u00fd \u0161upinkami \u010di bradavkami. Lupeny jsou k\u0159ehk\u00e9 nejd\u0159\u00edve b\u00edl\u00e9, pozd\u011bji r\u016f\u017eov\u00ed. Snadno \u010derviv\u00ed. Hod\u00ed se na obalov\u00e1n\u00ed, pra\u017een\u00ed s km\u00ednem, pln\u011bn\u00ed a zap\u00e9k\u00e1n\u00ed. Nehod\u00ed se k su\u0161en\u00ed.<\/li>\n<li>Z dal\u0161\u00edch obl\u00edben\u00fdch jedl\u00fdch hub bychom mohli zm\u00ednit t\u0159eba v\u00e1clavku obecnou, ryzce prav\u00e9ho, koz\u00e1ky, klouzky, k\u0159emen\u00e1\u010de a mnoho dal\u0161\u00edch, na n\u011b\u017e n\u00e1m ov\u0161em prostor nesta\u010d\u00ed. Pro zaj\u00edmavost zm\u00edn\u00edme je\u0161t\u011b jeden jedl\u00fd druh, a to kotr\u010d kade\u0159av\u00fd (Sparassis crispa), opom\u00edjenou houbu, kter\u00e1 na pohled notn\u011b p\u0159ipom\u00edn\u00e1 mo\u0159skou myc\u00ed houbu. Plodnice jsou trsovit\u00e9, velk\u00e9 a\u017e n\u011bkolik des\u00edtek centimetr\u016f, mohou v\u00e1\u017eit a\u017e n\u011bkolik kilogram\u016f. Z\u00e1m\u011bna s jakoukoli jedovatou houbou je v podstat\u011b nemo\u017en\u00e1. Kotr\u010d je v\u00fdte\u010dn\u00fd na v\u0161echny zp\u016fsoby, ale zejm\u00e9na se hod\u00ed na fale\u0161nou dr\u0161\u0165kovou pol\u00e9vku.<\/li>\n<\/ul>\n<\/ul>\n<p><strong>P\u011bstovan\u00e9 houby:<\/strong><\/p>\n<p>Z obchodu si m\u016f\u017eete don\u00e9st nap\u0159. \u010derstv\u00e9 chlazen\u00e9 \u017eampiony \u010di hl\u00edvu \u00fast\u0159i\u010dnou. M\u00e1te-li na to vhodn\u00e9 podm\u00ednky, m\u016f\u017eete si oba tyto druhy hub vyp\u011bstovat sami doma ze zakoupen\u00e9ho substr\u00e1tu.<\/p>\n<ul>\n<li><strong><em>Pe\u010d\u00e1rka zahr<\/em><\/strong><strong><em>adn\u00ed <\/em><\/strong>(Agaricus hortensis) \u010dili <strong><em>\u017eampio<\/em><\/strong><strong><em>n<\/em><\/strong> \u2013 v p\u0159\u00edrod\u011b rostou zejm\u00e9na na louk\u00e1ch, v zahrad\u00e1ch. \u017dampion je nej\u010dast\u011bji p\u011bstovanou tr\u017en\u00ed houbou. Klobouk je zpo\u010d\u00e1tku kulovit\u00fd, pozd\u011bji se rozev\u00edr\u00e1 do tvaru de\u0161tn\u00edku, barva je b\u00edl\u00e1 \u010di kr\u00e9mov\u00e1. Lupeny jsou v ml\u00e1d\u00ed r\u016f\u017eov\u00e9, pozd\u011bji tmavnou do hn\u011bda. \u017dampiony jsou velice chutn\u00e9, mohou slou\u017eit jako z\u00e1klad om\u00e1\u010dek, pol\u00e9vek, kombinuj\u00ed se s masem, t\u011bstovinami i zeleninou. Pe\u010d\u00e1rky obsahuj\u00ed <span class='tooltipsall tooltipsincontent classtoolTips197'>mutagenn\u00ed<\/span> l\u00e1tku agaritin, kter\u00e1 se ale z velk\u00e9 \u010d\u00e1sti ni\u010d\u00ed varem.<\/li>\n<li><em><strong>Hl\u00edva \u00fast\u0159i\u010dn\u00e1<\/strong><\/em> (Pleurotus ostreatus) \u2013\u00a0 m\u016f\u017eete ji nal\u00e9zt i v p\u0159\u00edrod\u011b na kmenech a pa\u0159ezech listnat\u00fdch strom\u016f. Hl\u00edva je masit\u00e1 b\u00edl\u00e1 \u010di \u0161edav\u00e1 houba, t\u0159e\u0148 je krat\u0161\u00ed, lupeny jsou b\u00edl\u00e9 \u010di na\u0161edl\u00e9. Dole na t\u0159eni b\u00fdv\u00e1 patrn\u00fd jakoby pl\u00eds\u0148ov\u00fd povlak, jedn\u00e1 se ov\u0161em jen o v\u00fdtrusy hl\u00edvy, nen\u00ed se t\u0159eba b\u00e1t cizorod\u00fdch pl\u00edsn\u00ed. Hl\u00edva je zdrojem pro zdrav\u00ed v\u00fdznamn\u00fdch l\u00e1tek imunoglukan\u016f, kter\u00e9 p\u0159\u00edzniv\u011b p\u016fsob\u00ed na podporu imunity a jsou proto sou\u010d\u00e1st\u00ed mnoha dopl\u0148k\u016f stravy. Hl\u00edva je velmi chutn\u00e1 houba, hod\u00ed se ke v\u0161em mo\u017en\u00fdm \u00faprav\u00e1m.<\/li>\n<li><strong><em>Bolcovitka bezov\u00e1 <\/em><\/strong>(Auricularia auricula-judae) \u010dili <strong><em>Jid\u00e1\u0161ovo ucho <\/em><\/strong>alias <strong><em>\u010dern\u00e1 houba <\/em><\/strong>je b\u011b\u017enou ingredienc\u00ed asijsk\u00e9 kuchyn\u011b. Z asijsk\u00fdch zem\u00ed se dov\u00e1\u017e\u00ed v su\u0161en\u00e9m stavu, p\u0159ed pou\u017eit\u00edm se nam\u00e1\u010d\u00ed, \u010d\u00edm\u017e dojde k nabobtn\u00e1n\u00ed, n\u00e1sledn\u011b lze houbu pokr\u00e1jet dle pot\u0159eby a tepeln\u011b zpracovat (tepeln\u00e9 zpracov\u00e1n\u00ed je v\u00fdznamn\u00e9 nebo\u0165 su\u0161en\u00e9 houby mohou b\u00fdt mikrobi\u00e1ln\u011b kontaminov\u00e1ny). V na\u0161\u00ed p\u0159\u00edrod\u011b se s jid\u00e1\u0161ov\u00fdm uchem m\u016f\u017eete setkat zejm\u00e9na na k\u016f\u0159e bezu. Konzistence plodnic je chrupav\u010dit\u00e1, chu\u0165 nen\u00ed p\u0159\u00edli\u0161 v\u00fdrazn\u00e1.<\/li>\n<\/ul>\n<p>\u00a0<\/p>\n<\/p>\n<p>\u00a0<\/p>\n<p><span><em><strong>Pou\u017eit\u00e1 literatura<\/strong><\/em><\/span><\/p>\n<p><span><em>Dvo\u0159\u00e1kov\u00e1, J., Houby jako potravina.
