Naz\u00fdv\u00e1me je antinutri\u010dn\u00ed l\u00e1tky.N\u011bkter\u00e9 l\u00e1tky zp\u016fsobuj\u00ed \u010di mohou zp\u016fsobit po\u0161kozen\u00ed organizmu nebo vyvolat onemocn\u011bn\u00ed, naz\u00fdv\u00e1me je toxick\u00e9 l\u00e1tky. O toxick\u00fdch l\u00e1tk\u00e1ch p\u0159irozen\u011b se vyskytuj\u00edc\u00edch v potravin\u00e1ch se do\u010dtete zde.<\/div>\n<p>Antinutri\u010dn\u00ed l\u00e1tky se v potravin\u00e1ch vyskytuj\u00ed bu\u010f p\u0159irozen\u011b (jako jejich b\u011b\u017en\u00e1 slo\u017eka), nebo jsou do nich p\u0159id\u00e1v\u00e1ny z\u00e1m\u011brn\u011b \u010di se do nich dost\u00e1vaj\u00ed necht\u011bn\u011b p\u0159i v\u00fdrob\u011b, skladov\u00e1n\u00ed apod. V tomto \u010dl\u00e1nku se zam\u011b\u0159\u00edme na p\u0159irozen\u011b se vyskytuj\u00edc\u00ed antinutri\u010dn\u00ed l\u00e1tky v potravin\u00e1ch.<\/p>\n<p>\u00a0<\/p>\n<p><strong>P\u0159irozen\u011b se vyskytuj\u00edc\u00ed antinutri\u010dn\u00ed l\u00e1tky v potravin\u00e1ch<\/strong><\/p>\n<p>Antinutri\u010dn\u00ed l\u00e1tky jsou ty, kter\u00e9 ovliv\u0148uj\u00ed \u010dinnost n\u011bkter\u00fdch <span class='tooltipsall tooltipsincontent classtoolTips280'>enzym\u016f<\/span> v tr\u00e1vic\u00edm traktu zv\u00ed\u0159at \u010di \u010dlov\u011bka, omezuj\u00ed \u00fa\u010dinky vitamin\u016f, naru\u0161uj\u00ed metabolismus miner\u00e1ln\u00edch l\u00e1tek, zhor\u0161uj\u00ed stravitelnost \u010di sni\u017euj\u00ed vyu\u017eitelnost \u017eivin a t\u00edm tak\u00e9 v\u00fd\u017eivovou hodnotu potravin. Sni\u017euj\u00ed vyu\u017eitelnost b\u00edlkovin a sachar\u00f3zy (\u0159epn\u00e9ho cukru) z potravy.<\/p>\n<p>Inhibitory <span class='tooltipsall tooltipsincontent classtoolTips268'>prote\u00e1z<\/span> se p\u0159irozen\u011b vyskytuj\u00ed p\u0159edev\u0161\u00edm v lu\u0161t\u011bnin\u00e1ch, d\u00e1le tak\u00e9 v obilovin\u00e1ch a dal\u0161\u00edch potravin\u00e1ch rostlinn\u00e9ho p\u016fvodu (brambory, raj\u010data). V s\u00f3jov\u00fdch bobech jsou p\u0159\u00edtomny inhibitory trypsinu (STI &#8211; <em>Soybean Trypsin <span class='tooltipsall tooltipsincontent classtoolTips243'>inhibitor<\/span><\/em>), ve fazol\u00edch je to <span class='tooltipsall tooltipsincontent classtoolTips243'>inhibitor<\/span> GBI (<em>Garden Bean <span class='tooltipsall tooltipsincontent classtoolTips243'>inhibitor<\/span><\/em>), v bramborech PI (<em>Potato <span class='tooltipsall tooltipsincontent classtoolTips243'>inhibitor<\/span><\/em>) atd.<\/p>\n<p><strong><em>Inhibitory <span class='tooltipsall tooltipsincontent classtoolTips268'>prote\u00e1z<\/span><\/em><\/strong> mohou zpomalovat r\u016fst zv\u00ed\u0159at a v chronick\u00fdch p\u0159\u00edpadech vyvol\u00e1vaj\u00ed zv\u011bt\u0161en\u00ed slinivky b\u0159i\u0161n\u00ed. P\u0159\u00ed\u010dinou je z\u0159ejm\u011b nedostatek <span class='tooltipsall tooltipsincontent classtoolTips169'>aminokyselin<\/span>, kter\u00e9 t\u011blo zv\u00ed\u0159at pot\u0159ebuje na stavbu sval\u016f. Aminokyseliny jsou p\u0159ednostn\u011b vyu\u017eity na tvorbu <span class='tooltipsall tooltipsincontent classtoolTips280'>enzym\u016f<\/span>, kter\u00fdch je v tr\u00e1vic\u00edm traktu d\u00edky antienzym\u016fm relativn\u00ed nedostatek.<\/p>\n<p>Inhibitory <span class='tooltipsall tooltipsincontent classtoolTips268'>prote\u00e1z<\/span> lze snadno zni\u010dit tepelnou \u00fapravou stravy. U lu\u0161t\u011bnin m\u016f\u017eeme sn\u00ed\u017eit mno\u017estv\u00ed t\u011bchto inhibitor\u016f tak\u00e9 kl\u00ed\u010den\u00edm.<\/p>\n<p><strong><em>Inhibitory <span class='tooltipsall tooltipsincontent classtoolTips242'>sachar\u00e1z<\/span><\/em><\/strong> jsou p\u0159\u00edtomny v obilovin\u00e1ch a r\u016fzn\u00fdch v\u00fdrobc\u00edch z nich (chleba, cere\u00e1ln\u00ed sn\u00eddan\u011b apod.). Dosud nejsou zn\u00e1my d\u016fsledky jejich p\u0159\u00edtomnosti v potravin\u00e1ch a p\u0159edpokl\u00e1d\u00e1 se, \u017ee jejich v\u00fdznam nen\u00ed velk\u00fd. V budoucnu by snad mohly b\u00fdt vyu\u017eity v prepar\u00e1tech pro reduk\u010dn\u00ed diety.<\/p>\n<p>\u00a0<\/p>\n<p><strong>L\u00e1tky naru\u0161uj\u00edc\u00ed metabolismus miner\u00e1ln\u00edch l\u00e1tek<\/strong><\/p>\n<p>Jsou to slou\u010deniny vyskytuj\u00edc\u00ed se p\u0159ev\u00e1\u017en\u011b v potravin\u00e1ch rostlinn\u00e9ho p\u016fvodu. Sni\u017euj\u00ed vyu\u017eitelnost miner\u00e1ln\u00edch l\u00e1tek z potravy a negativn\u011b ovliv\u0148uj\u00ed jejich metabolismus. K nejzn\u00e1m\u011bj\u0161\u00edm pat\u0159\u00ed kyselina fytov\u00e1 (fytin), kyselina \u0161\u0165avelov\u00e1 a glukosinol\u00e1ty.<\/p>\n<p><strong>Kyselina fytov\u00e1<\/strong> v\u00e1\u017ee miner\u00e1ln\u00ed l\u00e1tky (v\u00e1pn\u00edk, ho\u0159\u010d\u00edk, fosfor, \u017eelezo, zinek) do obt\u00ed\u017en\u011b vyu\u017eiteln\u00fdch komplex\u016f a zp\u016fsobuje jejich ni\u017e\u0161\u00ed vyu\u017eitelnost. Vyskytuje se v pom\u011brn\u011b velk\u00e9m mno\u017estv\u00ed v mnoha v\u00fdznamn\u00fdch plodin\u00e1ch &#8211; v obilovin\u00e1ch, lu\u0161t\u011bnin\u00e1ch, olejnin\u00e1ch. Mal\u00e9 mno\u017estv\u00ed kyseliny fytov\u00e9 obsahuj\u00ed tak\u00e9 brambory, mrkev, brokolice, jahody atd. K ur\u010dit\u00fdm ztr\u00e1t\u00e1m kyseliny fytov\u00e9 doch\u00e1z\u00ed nap\u0159\u00edklad louhov\u00e1n\u00edm lu\u0161t\u011bnin, varem ji odstranit nelze.<\/p>\n<p><strong>Kyselina \u0161\u0165avelov\u00e1<\/strong> sni\u017euje vyu\u017eitelnost v\u00e1pn\u00edku z potravin, je b\u011b\u017enou slo\u017ekou ovoce a zeleniny. Ve vy\u0161\u0161\u00edm mno\u017estv\u00ed ji najdeme zejm\u00e9na ve \u0161pen\u00e1tu, v reveni, ale tak\u00e9 v prav\u00e9m \u010daji a kakau. \u010caj je v zem\u00edch, kde se pije ve v\u011bt\u0161\u00edm mno\u017estv\u00ed, hlavn\u00edm zdrojem t\u00e9to kyseliny.<\/p>\n<p><strong>Glukosinol\u00e1ty<\/strong> (zejm\u00e9na progoitrin) nep\u0159\u00edzniv\u011b ovliv\u0148uj\u00ed \u010dinnost \u0161t\u00edtn\u00e9 \u017el\u00e1zy (br\u00e1n\u00ed synt\u00e9ze <span class='tooltipsall tooltipsincontent classtoolTips265'>hormon\u016f<\/span> \u0161t\u00edtn\u00e9 \u017el\u00e1zy a p\u0159enosu <span class='tooltipsall tooltipsincontent classtoolTips312'>j\u00f3du<\/span> v n\u00ed), lze je odstranit teplem. Jsou tak\u00e9 p\u0159\u00ed\u010dinou \u0161tiplav\u00e9ho aroma k\u0159enu, \u0159edkve, ho\u0159\u010dice, semen \u0159epky \u010di n\u011bkter\u00e9ho ko\u0159en\u00ed. D\u0159\u00edve byly naz\u00fdvan\u00e9 thioglukosidy.<\/p>\n<p>\u00a0<\/p>\n<p><strong>Fenolov\u00e9 slou\u010deniny<\/strong><\/p>\n<p>Do t\u00e9to skupiny \u0159ad\u00edme resorcinoly a t\u0159\u00edsloviny.<\/p>\n<p><strong>Resorcinoly<\/strong> nep\u0159\u00edzniv\u011b ovliv\u0148uj\u00ed r\u016fst zv\u00ed\u0159at a vyskytuj\u00ed se nejv\u00edce v \u017eit\u011b a <span class='tooltipsall tooltipsincontent classtoolTips241'>tritikale<\/span>, m\u00e9n\u011b v p\u0161enici a je\u0161t\u011b m\u00e9n\u011b v ovsu, je\u010dmeni a kuku\u0159ici. Nejvy\u0161\u0161\u00ed mno\u017estv\u00ed obsahuj\u00ed vn\u011bj\u0161\u00ed vrstvy obilky a kl\u00ed\u010dek, tak\u017ee p\u0159i mlet\u00ed na b\u00edlou mouku z\u016fst\u00e1v\u00e1 v\u011bt\u0161ina v otrub\u00e1ch, jejich obsah se sni\u017euje <span class='tooltipsall tooltipsincontent classtoolTips184'>fermentac\u00ed<\/span> (kva\u0161en\u00edm) a tepelnou \u00fapravou (pe\u010den\u00edm) t\u011bsta.<\/p>\n<p><strong>T\u0159\u00edsloviny (taniny)<\/strong> zp\u016fsobuj\u00ed trpkou sv\u00edravou chu\u0165 n\u011bkter\u00fdch potravin (nap\u0159. \u010daj, k\u00e1va, kakao, nezral\u00e9 ovoce &#8211; ban\u00e1ny, v\u00edno, pivo). Jejich antinutri\u010dn\u00ed \u00fa\u010dinek spo\u010d\u00edv\u00e1 v tom, \u017ee tvo\u0159\u00ed komplexy s b\u00edlkovinami, kter\u00e9 jsou pot\u00e9 h\u016f\u0159e straviteln\u00e9 a mohou proto zp\u016fsobovat ni\u017e\u0161\u00ed v\u00e1hov\u00e9 p\u0159\u00edr\u016fstky hospod\u00e1\u0159sk\u00fdch zv\u00ed\u0159at. Sni\u017euj\u00ed nav\u00edc absorpci n\u011bkter\u00fdch miner\u00e1ln\u00edch l\u00e1tek a mohou po\u0161kodit st\u0159evn\u00ed sliznici. Velk\u00e9 mno\u017estv\u00ed t\u0159\u00edslovin obsahuj\u00ed nap\u0159\u00edklad semena lu\u0161t\u011bnin.<\/p>\n<p>\u00a0<\/p>\n<p><strong>Oligosacharidy<\/strong><\/p>\n<p>Oligosacharidy (p\u0159esn\u011bji alfa-galaktosidy) se ve velk\u00e9m mno\u017estv\u00ed vyskytuj\u00ed v lu\u0161t\u011bnin\u00e1ch (rafin\u00f3za, verbask\u00f3za, stachy\u00f3za), kde slou\u017e\u00ed jako z\u00e1sob\u00e1rna energie. Jsou odpov\u011bdn\u00e9 za tr\u00e1vic\u00ed pot\u00ed\u017ee vznikl\u00e9 po konzumaci lu\u0161t\u011bnin (nad\u00fdm\u00e1n\u00ed, plynatost) a omezuj\u00ed jejich pou\u017eitelnost a oblibu v na\u0161\u00ed strav\u011b.
