Spot\u0159eba je v\u0161ak velmi n\u00edzk\u00e1, ani ne 2 kg\/osobu\/rok. Ve st\u0159edn\u00ed Evrop\u011b je to podobn\u00e9 jako u n\u00e1s, v ji\u017en\u00edch zem\u00edch, jako jsou \u0160pan\u011blsko \u010di Francie, je o n\u011bco vy\u0161\u0161\u00ed, cca 6 kg\/osobu\/rok. Naopak extr\u00e9mn\u011b vysok\u00e1 je v n\u011bkter\u00fdch rozvojov\u00fdch zem\u00edch, kde dosahuje i v\u00edce ne\u017e 50 kg\/osobu\/rok.<\/p>\n<p>V n\u011bkter\u00fdch zem\u00edch se konzumuj\u00ed tak\u00e9 \u010derstv\u00e9 nezral\u00e9 plody a semena n\u011bkter\u00fdch druh\u016f luskovin, kter\u00e9 naz\u00fdv\u00e1me <strong>luskov\u00e1 zelenina<\/strong>. U n\u00e1s je k dost\u00e1n\u00ed zelen\u00fd hr\u00e1\u0161ek a zelen\u00e9 fazolky (fazolov\u00e9 lusky).<\/p>\n<p>\u00a0<\/p>\n<p><strong>N\u011bco z historie lu\u0161t\u011bnin<\/strong><\/p>\n<p>Nejd\u00e9le p\u011bstovanou a tak\u00e9 konzumovanou lu\u0161t\u011bninou jsou patrn\u011b fazole, kter\u00e9 se p\u011bstovaly v Peru ji\u017e asi 8000 let p\u0159. n. l. V Asii byla asi 2000 let p\u0159. n. l. p\u011bstov\u00e1na s\u00f3ja, v ji\u017en\u00ed Americe podzemnice olejn\u00e1 (p\u0159ed 3500 lety).<\/p>\n<p>Lze se domn\u00edvat, \u017ee ve star\u00e9m \u0158\u00edm\u011b m\u011bly lu\u0161t\u011bniny d\u016fle\u017eit\u00e9 postaven\u00ed, nebo\u0165 jm\u00e9na v\u00fdznamn\u00fdch \u0159\u00edmsk\u00fdch rod\u016f jsou odvozena pr\u00e1v\u011b od latinsk\u00fdch n\u00e1zv\u016f\u00a0 \u010dty\u0159 hlavn\u00edch lu\u0161t\u011bnin &#8211; Cicero (cizrna &#8211; <em>Cicer arietinum<\/em>), Fabius (boby &#8211; <em>Vicia faba<\/em>), Lentulus (\u010do\u010dka &#8211;\u00a0 <em>Lens culinaris<\/em>) a Piso (hr\u00e1ch &#8211; <em>Pisum sativum<\/em>).<\/p>\n<p>\u00a0<\/p>\n<p><strong>Dejte lu\u0161t\u011bnin\u00e1m zelenou<\/strong><\/p>\n<p>Lu\u0161t\u011bniny se sv\u00fdm slo\u017een\u00edm v\u00edce podobaj\u00ed obilnin\u00e1m ne\u017e \u010derstv\u00e9 zelenin\u011b. Obsahuj\u00ed pom\u011brn\u011b <strong>velk\u00e9 mno\u017estv\u00ed b\u00edlkovin<\/strong> (asi 25 %), kter\u00e9 v kombinaci s obilovinami (nejl\u00e9pe celozrnn\u00fdmi) tvo\u0159\u00ed kvalitn\u00ed b\u00edlkovinu srovnatelnou s b\u00edlkovinou \u017eivo\u010di\u0161nou.<\/p>\n<p><strong>Obsah tuku je n\u00edzk\u00fd<\/strong> (krom\u011b s\u00f3ji a ara\u0161\u00edd\u016f, jejich\u017e tuky jsou v\u0161ak zdrav\u00ed p\u0159\u00edzniv\u00e9) a nav\u00edc nen\u00ed doprov\u00e1zen cholesterolem jako v \u017eivo\u010di\u0161n\u00fdch potravin\u00e1ch.<\/p>\n<p>Jsou <strong>bohat\u00fdm zdrojem <a href=\"https:\/\/viscojis.cz\/teens\/102\/\" target=\"_blank\" rel=\"noopener noreferrer\"><span class='tooltipsall tooltipsincontent classtoolTips219'>vl\u00e1kniny<\/span><\/a><\/strong>, nap\u0159\u00edklad 100 g va\u0159en\u00e9 \u010do\u010dky obsahuje cca 11 g <span class='tooltipsall tooltipsincontent classtoolTips219'>vl\u00e1kniny<\/span> (denn\u00ed doporu\u010den\u00e9 mno\u017estv\u00ed pro dosp\u011bl\u00e9ho \u010dlov\u011bka je 25-30g).<\/p>\n<p>Obsahuj\u00ed tak\u00e9 pom\u011brn\u011b v\u00fdznamn\u00e9 mno\u017estv\u00ed miner\u00e1ln\u00edch l\u00e1tek, p\u0159edev\u0161\u00edm <strong>v\u00e1pn\u00edku, \u017eeleza, ho\u0159\u010d\u00edku, drasl\u00edku<\/strong>, a n\u011bkter\u00fdch vitamin\u016f (<strong>vitaminy skupiny B<\/strong>).<\/p>\n<p>K pozitivn\u00edm \u00fa\u010dink\u016fm lu\u0161t\u011bnin mus\u00edme je\u0161t\u011b p\u0159ipo\u010d\u00edtat <strong>p\u0159ednosti s\u00f3ji<\/strong>, kter\u00e1 se sv\u00fdm chemick\u00fdm slo\u017een\u00edm li\u0161\u00ed od ostatn\u00edch druh\u016f. Jej\u00ed b\u00edlkovina obsahuje l\u00e1tky, kter\u00e9 <strong>sni\u017euj\u00ed hladinu <span class='tooltipsall tooltipsincontent classtoolTips188'>cholesterolu<\/span> tuk\u016f v krvi<\/strong> a pom\u00e1haj\u00ed tak v boji proti srde\u010dn\u011b c\u00e9vn\u00edm nemocem, stejn\u011b tak <strong>s\u00f3jov\u00e9 fytoestrogeny<\/strong> sni\u017euj\u00ed riziko srde\u010dn\u011b c\u00e9vn\u00edch onemocn\u011bn\u00ed u \u017een v <span class='tooltipsall tooltipsincontent classtoolTips228'>menopauze<\/span>. S\u00f3ja je rovn\u011b\u017e jedn\u00edm z nejv\u00fdznamn\u011bj\u0161\u00edch potravn\u00edch zdroj\u016f <strong>fosfolipid\u016f<\/strong> (podobn\u011b jako <a href=\"https:\/\/viscojis.cz\/teens\/124\/\" target=\"_blank\" rel=\"noopener noreferrer\">vejce<\/a>), kter\u00fdch je v na\u0161\u00ed strav\u011b velk\u00fd nedostatek.<\/p>\n<p>\u00a0<\/p>\n<p><strong>Jak\u00e9 jsou nev\u00fdhody lu\u0161t\u011bnin jako potraviny?<\/strong><\/p>\n<p>Mnoho lid\u00ed si st\u011b\u017euje na <strong>tr\u00e1vic\u00ed probl\u00e9my<\/strong> (plynatost, nad\u00fdm\u00e1n\u00ed apod.), kter\u00fdmi trp\u00ed po po\u017eit\u00ed lu\u0161t\u011bnin. Tyto probl\u00e9my zp\u016fsobuj\u00ed oligosacharidy, kter\u00e9 v\u0161ak lze \u010d\u00e1ste\u010dn\u011b odstranit vhodnou p\u0159\u00edpravou (viz n\u00ed\u017ee).<\/p>\n<p>Syrov\u00e9 lu\u0161t\u011bniny obsahuj\u00ed mnohem v\u00edce p\u0159\u00edrodn\u00edch <strong>antinutri\u010dn\u00edch a toxick\u00fdch l\u00e1tek<\/strong> ne\u017e obiloviny, kter\u00e9 se v\u0161ak varem ni\u010d\u00ed, a proto je nutn\u00e9 je dob\u0159e tepeln\u011b zpracovat (nap\u0159\u00edklad lektiny ve fazol\u00edch). U n\u011bkter\u00fdch druh\u016f sta\u010d\u00ed nechat semena dostate\u010dn\u011b dlouhou dobu nakl\u00ed\u010dit (fazole mungo) bez n\u00e1sledn\u00e9ho va\u0159en\u00ed.<\/p>\n<p>\u00a0<\/p>\n<p><strong>P\u0159\u00edprava lu\u0161t\u011bnin<\/strong><\/p>\n<p>Vhodnou \u00fapravou m\u016f\u017eeme v\u00fdrazn\u011b sn\u00ed\u017eit obsah l\u00e1tek v lu\u0161t\u011bnin\u00e1ch vyvol\u00e1vaj\u00edc\u00ed tr\u00e1vic\u00ed pot\u00ed\u017ee (oligosacharidy).<\/p>\n<p><strong><em>Nam\u00e1\u010den\u00ed a va\u0159en\u00ed<\/em><\/strong><\/p>\n<p>Nejprve lu\u0161t\u011bniny zbav\u00edme kam\u00ednk\u016f, d\u016fkladn\u011b propereme a pot\u00e9 <strong>namo\u010d\u00edme<\/strong> nejl\u00e9pe p\u0159es noc (nejkrat\u0161\u00ed dobu se nam\u00e1\u010d\u00ed \u010do\u010dka, nejd\u00e9le s\u00f3ja &#8211; a\u017e 24 hodin), <strong>\u010d\u00edm\u017e se zbav\u00edme a\u017e 40 % oligosacharid\u016f<\/strong>. Vodu pot\u00e9 slijeme a na va\u0159en\u00ed pou\u017eijeme novou. Pro lep\u0161\u00ed stravitelnost m\u016f\u017eeme p\u0159idat major\u00e1nku nebo saturejku. Lu\u0161t\u011bniny p\u0159ivedeme do varu a po chv\u00edli pokrop\u00edme studenou vodou &#8211; zrychl\u00edme tak zm\u011bknut\u00ed. Ide\u00e1ln\u00ed na va\u0159en\u00ed je tlakov\u00fd hrnec, ve kter\u00e9m va\u0159\u00edme \u010do\u010dku asi 15 minut, fazole 30-40 minut podle velikosti, hr\u00e1ch 30-50 minut, cizrnu 45 minut, s\u00f3ju 1,5 hodiny. P\u0159ed koncem varu odtlakujeme, osol\u00edme a dova\u0159\u00edme.<\/p>\n<p>P\u0159edev\u0161\u00edm fazole se mus\u00ed d\u016fkladn\u011b va\u0159it! V syrov\u00e9 podob\u011b je nikdy nekonzumujte, obsahuj\u00ed jedovat\u00e9 lektiny, jejich\u017e po\u017eit\u00ed vyvol\u00e1v\u00e1 siln\u00e9 zvracen\u00ed a pr\u016fjem. Tyto specifick\u00e9 b\u00edlkoviny obsa\u017een\u00e9 ve fazol\u00edch se zne\u0161kodn\u00ed va\u0159en\u00edm.<\/p>\n<p><strong><em>Kl\u00ed\u010den\u00ed (p\u0159\u00edpadn\u011b n\u00e1sledovan\u00e9 va\u0159en\u00edm)<\/em><\/strong><\/p>\n<p>Pro zlep\u0161en\u00ed stravitelnosti je tak\u00e9 mo\u017en\u00e9 nechat lu\u0161t\u011bniny pouze nakl\u00ed\u010dit, pop\u0159\u00edpad\u011b po nakl\u00ed\u010den\u00ed je\u0161t\u011b uva\u0159it. Nakl\u00ed\u010den\u00e1 semena obsahuj\u00ed v\u00edce vitamin\u016f ne\u017e nenakl\u00ed\u010den\u00e1 a a\u017e o 80 % m\u00e9n\u011b oligosacharid\u016f zp\u016fsobuj\u00edc\u00edch nad\u00fdm\u00e1n\u00ed.\u00a0 U n\u011bkter\u00fdch lu\u0161t\u011bnin lze konzumovat dostate\u010dn\u011b dlouho nakl\u00ed\u010den\u00e1 semena bez n\u00e1sledn\u00e9ho va\u0159en\u00ed. Nap\u0159\u00edklad fazole mungo (lze i zakoupit), \u010do\u010dku a cizrnu. Semena je v\u0161ak t\u0159eba nechat kl\u00ed\u010dit alespo\u0148 3 dny (kl\u00ed\u010dky maj\u00ed b\u00fdt 2,5 a\u017e 5 cm dlouh\u00e9), abychom si byli jisti, \u017ee do\u0161lo k rozkladu antinutri\u010dn\u00edch l\u00e1tek obsa\u017een\u00fdch v syrov\u00fdch lu\u0161t\u011bnin\u00e1ch. Fazole je t\u0159eba v\u017edy va\u0159it!<\/p>\n<p>\u00a0<\/p>\n<p><strong>Lu\u0161t\u011bniny by se na na\u0161em tal\u00ed\u0159i m\u011bly objevit alespo\u0148 2kr\u00e1t t\u00fddn\u011b<\/strong>, ide\u00e1ln\u011b v podob\u011b sal\u00e1tu \u010di pol\u00e9vky. Konzumovat je ve form\u011b celolu\u0161t\u011bninov\u00fdch pokrm\u016f (nap\u0159\u00edklad jako \u010do\u010dku na kyselo) \u010di v kombinaci s \u017eivo\u010di\u0161n\u00fdmi potravinami (\u010do\u010dka s vejcem, fazole s p\u00e1rkem) moc nedoporu\u010dujeme, pokrm je velmi t\u011b\u017ece straviteln\u00fd a obsahuje zbyte\u010dn\u011b mnoho b\u00edlkovin.
