U n\u00e1s i v jin\u00fdch evropsk\u00fdch zem\u00edch a tak\u00e9 v USA je nej\u010dast\u011bji konzumov\u00e1no ml\u00e9ko kravsk\u00e9 a v\u00fdrobky z n\u011bj jsou na trhu b\u011b\u017en\u011b k dost\u00e1n\u00ed. Nen\u00ed to v\u0161ak jedin\u00fd druh ml\u00e9ka, kter\u00fd je u n\u00e1s k dispozici. Pom\u011brn\u011b dostupn\u00e9 je tak\u00e9 ml\u00e9ko koz\u00ed a ov\u010d\u00ed, za\u010d\u00edn\u00e1 se objevovat i <a href=\"http:\/\/www.biopotraviny.info\/oslina.html\" target=\"_blank\" rel=\"noopener\">ml\u00e9ko osl\u00ed<\/a>.<\/p>\n<p>Ml\u00e9ko ostatn\u00edch savc\u016f se u n\u00e1s b\u011b\u017en\u011b nekonzumuje, ale nap\u0159\u00edklad v horsk\u00fdch oblastech \u010c\u00edny b\u011b\u017en\u011b konzumuj\u00ed ml\u00e9ko ja\u010d\u00ed, pasteveck\u00e9 kmeny v Kazachst\u00e1nu zase velbloud\u00ed a v Peru pij\u00ed ml\u00e9ko lam\u00ed. Ve V\u00fdchodn\u00ed Evrop\u011b je ji\u017e po stalet\u00ed dlouh\u00e1 tradice konzumace kobyl\u00edho ml\u00e9ka.<\/p>\n<p><strong>Obsah z\u00e1kladn\u00edch \u017eivin v n\u011bkter\u00fdch druz\u00edch ml\u00e9ka<\/strong><\/p>\n<p>Ml\u00e9ko je z\u00e1kladn\u00ed potravou narozen\u00fdch ml\u00e1\u010fat, kter\u00e1 z n\u011bj z\u00edsk\u00e1vaj\u00ed v\u0161e, co pot\u0159ebuj\u00ed ke sv\u00e9mu r\u016fstu (z\u00e1kladn\u00ed \u017eiviny, protil\u00e1tky, vitaminy atd.). Ml\u00e9ko koz\u00ed, ov\u010d\u00ed a koz\u00ed \u0159ad\u00edme mezi <span class='tooltipsall tooltipsincontent classtoolTips121'>ml\u00e9ka kaseinov\u00e1<\/span>, kobyla a prasnice produkuj\u00ed <span class='tooltipsall tooltipsincontent classtoolTips109'>ml\u00e9ko albuminov\u00e9<\/span>.<\/p>\n<p>Ml\u00e9ko je barvy b\u00edl\u00e9, n\u011bkter\u00e9 druhy maj\u00ed \u017elut\u00fd odst\u00edn, jin\u00e1 na\u0161edl\u00fd. \u017dlut\u00fd odst\u00edn ml\u00e9ka zp\u016fsobuj\u00ed karotenoidn\u00ed l\u00e1tky p\u0159\u00edtomn\u00e9 v ml\u00e9\u010dn\u00e9m tuku, za nazelenal\u00e9 zbarven\u00ed syrov\u00e1tky je odpov\u011bdn\u00fd vitamin B2 (riboflavin).<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Koz\u00ed ml\u00e9ko<\/strong><\/p>\n<p>Koz\u00ed ml\u00e9ko bylo ve star\u00e9m \u0158\u00edm\u011b pova\u017eov\u00e1no za elix\u00edr kr\u00e1sy a dlouhov\u011bkosti a bylo vysoce cen\u011bn\u00e9. Dodnes jej n\u011bkter\u00e9 horsk\u00e9 n\u00e1rody pou\u017e\u00edvaj\u00ed jako sou\u010d\u00e1st l\u00e9\u010debn\u00fdch mast\u00ed.<\/p>\n<p>My sice nepova\u017eujeme koz\u00ed ml\u00e9ko za z\u00e1zra\u010dn\u00fd l\u00e9k, nicm\u00e9n\u011b jde o nutri\u010dn\u011b hodnotnou potravinu, kter\u00e1 m\u00e1 oproti tradi\u010dn\u00edmu kravsk\u00e9mu ml\u00e9ku ur\u010dit\u00e9 p\u0159ednosti (ale tak\u00e9 nedostatky).<\/p>\n<p>Celkov\u00fdm obsahem b\u00edlkovin se ml\u00e9ko koz\u00ed od kravsk\u00e9ho t\u00e9m\u011b\u0159 neli\u0161\u00ed, m\u00e1 o trochu m\u00e9n\u011b <span class='tooltipsall tooltipsincontent classtoolTips235'>sacharid\u016f<\/span> a lehce vy\u0161\u0161\u00ed obsah tuk\u016f, kter\u00fd je rozpt\u00fdlen v men\u0161\u00edch kap\u00e9nk\u00e1ch ne\u017e v kravsk\u00e9m ml\u00e9ce, a t\u00edm tak\u00e9 sn\u00e1ze straviteln\u00fd. Z vitamin\u016f obsahuje v porovn\u00e1n\u00ed s kravsk\u00fdm ml\u00e9kem m\u00e9n\u011b vitaminu B2, B12 a kyseliny listov\u00e9. Z miner\u00e1ln\u00edch l\u00e1tek obsahuje m\u00e9n\u011b \u017eeleza (proto d\u0159\u00edve d\u011bti z chud\u0161\u00edch rodin krmen\u00e9 jen koz\u00edm ml\u00e9kem trp\u011bly an\u00e9mi\u00ed) a o n\u011bco v\u00edce v\u00e1pn\u00edku a drasl\u00edku.<\/p>\n<p>Koz\u00ed ml\u00e9ko se vyzna\u010duje charakteristick\u00fdm pachem, pro kter\u00fd je pro mnoho lid\u00ed konzumace koz\u00edch v\u00fdrobk\u016f nep\u0159ijateln\u00e1. Z koz\u00edho ml\u00e9ka se stejn\u011b jako z kravsk\u00e9ho vyr\u00e1b\u00ed r\u016fzn\u00e9 s\u00fdry, jogurty, jogurtov\u00e1 ml\u00e9ka, koz\u00ed dezerty \u010di \u017eerv\u00e9.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Ov\u010d\u00ed ml\u00e9ko<\/strong><\/p>\n<p>Ov\u010d\u00ed ml\u00e9ko m\u00e1 jemnou, lehce nasl\u00e1dlou chu\u0165, pro mnoh\u00e9 jeho milovn\u00edky je chutn\u00e9 a lahodn\u00e9. V n\u011bkter\u00fdch zem\u00edch (nap\u0159\u00edklad ve velk\u00e9 Brit\u00e1nii) se b\u011b\u017en\u011b prod\u00e1v\u00e1 jak \u010derstv\u00e9, tak i zmrazen\u00e9.<\/p>\n<p>Ve srovn\u00e1n\u00ed s kravsk\u00fdm ml\u00e9kem je o n\u011bco m\u00e1lo slad\u0161\u00ed, av\u0161ak mnohem tu\u010dn\u011bj\u0161\u00ed, tak\u00e9 obsah b\u00edlkovin je vy\u0161\u0161\u00ed. Ov\u010d\u00ed ml\u00e9ko je 3x bohat\u0161\u00ed na <span class='tooltipsall tooltipsincontent classtoolTips53'>syrov\u00e1tkov\u00e9 b\u00edlkoviny<\/span> ne\u017e ml\u00e9ko kravsk\u00e9 a koz\u00ed, d\u00edky \u010demu\u017e je snadn\u011bji straviteln\u00e9. K lep\u0161\u00ed stravitelnosti p\u0159isp\u00edv\u00e1 tak\u00e9 slo\u017een\u00ed tuku, ve kter\u00e9m je vy\u0161\u0161\u00ed pod\u00edl mastn\u00fdch kyselin s kr\u00e1tk\u00fdm a st\u0159edn\u00edm \u0159et\u011bzcem. P\u0159edpokl\u00e1d\u00e1 se, \u017ee toto vede k vy\u0161\u0161\u00ed vst\u0159ebatelnosti ml\u00e9\u010dn\u00e9ho cukru (<span class='tooltipsall tooltipsincontent classtoolTips270'>lakt\u00f3zy<\/span>), co\u017e je v\u00fdhodn\u00e9 pro osoby s m\u00edrnou <a href=\"https:\/\/viscojis.cz\/teens\/56\/\" target=\"_blank\" rel=\"noopener\">lakt\u00f3zovou intoleranc\u00ed<\/a>.<\/p>\n<p>Obsah vitamin\u016f rozpustn\u00fdch v tuc\u00edch (A, D, E) je v ov\u010d\u00edm ml\u00e9ku vy\u0161\u0161\u00ed ne\u017e v kravsk\u00e9m \u010di koz\u00edm, stejn\u011b tak vitamin\u016f skupiny B (B1, B2, B6, B12, kyselina pantotenov\u00e1, niacin, <span class='tooltipsall tooltipsincontent classtoolTips295'>biotin<\/span>). \u017delezo se v ov\u010d\u00edm ml\u00e9ku vyskytuje 3x v\u00edce ne\u017e v kravsk\u00e9m, stejn\u011b i obsah ho\u0159\u010d\u00edku, zinku a v\u00e1pn\u00edku je vy\u0161\u0161\u00ed. Obsah v\u00e1pn\u00edku je asi o 70 % vy\u0161\u0161\u00ed ne\u017e v kravsk\u00e9m ml\u00e9ce, obsah zinku a\u017e 3x vy\u0161\u0161\u00ed.<\/p>\n<p>Z ov\u010d\u00edho ml\u00e9ka se vyr\u00e1b\u00ed hlavn\u011b s\u00fdry (hrudkov\u00fd, <span class='tooltipsall tooltipsincontent classtoolTips290'>bryndza<\/span>, <span class='tooltipsall tooltipsincontent classtoolTips251'>o\u0161tiepok<\/span>, <span class='tooltipsall tooltipsincontent classtoolTips316'>urda<\/span>) tak\u00e9 jogurty, kef\u00edrov\u00e1 ml\u00e9ka \u010di&nbsp; <span class='tooltipsall tooltipsincontent classtoolTips250'>\u017ein\u010dica<\/span>.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Kobyl\u00ed ml\u00e9ko<\/strong><\/p>\n<p>Kobyl\u00ed ml\u00e9ko je nejv\u00edce cen\u011bno ve v\u00fdchodn\u00ed Evrop\u011b, kde se vyu\u017e\u00edv\u00e1 tak\u00e9 jako posiluj\u00edc\u00ed prost\u0159edek a jsou mu p\u0159isuzov\u00e1ny dokonce omlazovac\u00ed \u00fa\u010dinky.&nbsp;<\/p>\n<p>Sv\u00fdm slo\u017een\u00edm se hodn\u011b li\u0161\u00ed od kravsk\u00e9ho. Obsahuje m\u00e1lo tuku, b\u00edlkovin, ale mnoho <span class='tooltipsall tooltipsincontent classtoolTips270'>lakt\u00f3zy<\/span>, a je proto podobn\u011bj\u0161\u00ed mate\u0159sk\u00e9mu ml\u00e9ku ne\u017e ml\u00e9ka jin\u00fdch druh\u016f zv\u00ed\u0159at. Je dvakr\u00e1t m\u00e9n\u011b tu\u010dn\u00e9 s vysok\u00fdm obsahem <a href=\"https:\/\/viscojis.cz\/teens\/blog\/category\/iviny-a-voda\/bilkoviny-ve-vyiv\/\" target=\"_blank\" rel=\"noopener\">esenci\u00e1ln\u00edch mastn\u00fdch kyselin<\/a>.
