Kakao je pr\u00e1\u0161ek vyr\u00e1b\u011bn\u00fd z kakaov\u00fdch bob\u016f, co\u017e jsou semena kakaovn\u00edku (latinsky Theobroma cacao). Kakaovn\u00edk poch\u00e1z\u00ed z Ameriky, v Mexiku byl p\u011bstov\u00e1n ji\u017e Azt\u00e9ky a Mayi p\u0159ed dv\u011bma tis\u00edci lety.<\/p>\n<p>V 16. stolet\u00ed p\u0159ivezli kakaov\u00e9 boby do Evropy \u0160pan\u011bl\u00e9, odtud se roz\u0161\u00ed\u0159ilo do Francie a n\u00e1sledn\u011b do cel\u00e9 Evropy. V dne\u0161n\u00ed dob\u011b jsou kakaov\u00e9 boby p\u011bstov\u00e1ny v Africe, Americe, Asii, Indii a Austr\u00e1lii.<\/p>\n<p>P\u0159i zpracov\u00e1n\u00ed se kakaov\u00e9 boby nejprve <span class='tooltipsall tooltipsincontent classtoolTips184'>fermentuj\u00ed<\/span>, pak su\u0161\u00ed, t\u0159\u00edd\u00ed, pra\u017e\u00ed (pra\u017een\u00ed se m\u016f\u017ee vypustit, v nepra\u017een\u00fdch bobech je zachov\u00e1no v\u00edce hodnotn\u00fdch l\u00e1tek), drt\u00ed, melou a lisuj\u00ed. B\u011bhem mlet\u00ed se z\u00edsk\u00e1v\u00e1 tu\u010dn\u00e1 a ho\u0159k\u00e1 kakaov\u00e1 hmota, odd\u011bluje se <span class='tooltipsall tooltipsincontent classtoolTips144'>kakaov\u00e9 m\u00e1slo<\/span> a pevn\u00e9 zbytky se melou na kakaov\u00fd pr\u00e1\u0161ek. Kakaov\u00e1 hmota a <span class='tooltipsall tooltipsincontent classtoolTips144'>kakaov\u00e9 m\u00e1slo<\/span> jsou z\u00e1kladn\u00ed slo\u017eky pro v\u00fdrobu \u010dokol\u00e1dy. Kakaov\u00fd pr\u00e1\u0161ek se vyu\u017e\u00edv\u00e1 tak\u00e9 jako p\u0159\u00edsada do t\u011bst, k v\u00fdrob\u011b studen\u00fdch a tepl\u00fdch n\u00e1poj\u016f, kr\u00e9m\u016f a polev, k dost\u00e1n\u00ed je i <span class='tooltipsall tooltipsincontent classtoolTips200'>instantn\u00ed<\/span> kakao, nap\u0159. Granko, kter\u00e9 je ji\u017e slazen\u00e9 a dob\u0159e se rozpou\u0161t\u00ed.<\/p>\n<p>\u00a0<\/p>\n<p><strong>Slo\u017een\u00ed kakaa<\/strong><\/p>\n<ul>\n<li>obsahuje hodn\u011b <span class='tooltipsall tooltipsincontent classtoolTips235'>sacharid\u016f<\/span> (45 %), m\u00e9n\u011b pak b\u00edlkoviny (22 %) a tuky (17 %)<\/li>\n<li>energetick\u00e1 hodnota je asi 1760 kJ ve 100 g kakaa<\/li>\n<li>obsahuje l\u00e1tky naz\u00fdvan\u00e9 <span class='tooltipsall tooltipsincontent classtoolTips252'>alkaloidy<\/span>, nejv\u00fdznamn\u011bj\u0161\u00ed je theobromin (1,5 %) a <span class='tooltipsall tooltipsincontent classtoolTips296'>kofein<\/span> (0,3 %)<\/li>\n<li>obsahuje miner\u00e1ln\u00ed l\u00e1tky a stopov\u00e9 prvky \u2013 v\u00e1pn\u00edk, ho\u0159\u010d\u00edk, fosfor a \u017eelezo<\/li>\n<\/ul>\n<p>\u00a0<\/p>\n<p><span><strong>\u010cokol\u00e1da<\/strong><\/span><\/p>\n<p>B\u00fdvala naz\u00fdv\u00e1na pokrmem boh\u016f, miluj\u00ed ji nejv\u00edce d\u011bti, ale neodol\u00e1 j\u00ed ani leckter\u00fd dosp\u011bl\u00e1k. P\u016fvodn\u00ed \u010dokol\u00e1da se od t\u00e9 dne\u0161n\u00ed velmi li\u0161ila. Jednalo se o n\u00e1poj ho\u0159k\u00e9 chuti, kter\u00fd byl dostupn\u00fd pouze vy\u0161\u0161\u00edm spole\u010densk\u00fdm vrstv\u00e1m. Teprve v roce 1828 vymyslel Holan\u010fan Conrad van Houten speci\u00e1ln\u00ed lis, s jeho\u017e pomoc\u00ed odd\u011blil <span class='tooltipsall tooltipsincontent classtoolTips144'>kakaov\u00e9 m\u00e1slo<\/span> od kakaov\u00e9ho pr\u00e1\u0161ku, \u010d\u00edm\u017e se podstatn\u011b sn\u00ed\u017eila cena \u010dokol\u00e1dy, a ta se tak stala dostupn\u00e1 \u0161irok\u00fdm mas\u00e1m. Prav\u00e1 \u010dokol\u00e1da se vyr\u00e1b\u00ed pouze z kakaov\u00e9 hmoty a kakaov\u00e9ho m\u00e1sla. D\u00e1 se \u0159\u00edct, \u017ee \u010d\u00edm v\u00edce kakaa \u010dokol\u00e1da obsahuje, t\u00edm je kvalitn\u011bj\u0161\u00ed (tzn. m\u011bla by obsahovat alespo\u0148 70 % a v\u00edce kakaov\u00e9 <span class='tooltipsall tooltipsincontent classtoolTips276'>su\u0161iny<\/span>). K z\u00e1kladn\u00ed sm\u011bsi se d\u00e1le mohou p\u0159idat cukr, ml\u00e9ko, smetana, ko\u0159en\u00ed, o\u0159echy, su\u0161en\u00e9 ovoce, su\u0161enky a dal\u0161\u00ed ingredience podle druhu \u010dokol\u00e1dy.<\/p>\n<p>\u010cokol\u00e1du \u0159ad\u00edme mezi potraviny s vysokou energetickou hodnotou (ho\u0159k\u00e1 \u010dokol\u00e1da m\u00e1 energetickou hodnotu asi 2200 kJ\/100 g, ml\u00e9\u010dn\u00e1 2280 kJ\/100 g, b\u00edl\u00e1 2300 kJ\/100 g). \u017diviny v n\u00ed obsa\u017een\u00e9 jsou pom\u011brn\u011b dob\u0159e straviteln\u00e9 a slou\u017e\u00ed jako rychl\u00fd zdroj energie, proto je velmi obl\u00edbena a vyu\u017e\u00edv\u00e1na sportovci. Jeliko\u017e se jedn\u00e1 o potravinu s vysok\u00fdm obsahem tuku (minim\u00e1ln\u011b 40 %)\u00a0a \u010dasto i cukru, nen\u00ed b\u011b\u017en\u00e1 \u010dokol\u00e1da vhodn\u00e1 pro <span class='tooltipsall tooltipsincontent classtoolTips248'>diabetiky<\/span> a\u00a0 osoby s nemocn\u00fdm \u017elu\u010dn\u00edkem. Chu\u0165 kakau d\u00e1v\u00e1 jednozna\u010dn\u011b <span class='tooltipsall tooltipsincontent classtoolTips144'>kakaov\u00e9 m\u00e1slo<\/span>. Pokud v n\u011bm chyb\u00ed, je jeho kvalita \u0161patn\u00e1. Stejn\u00e9 je to s \u010dokol\u00e1dou, pokud obsahuje n\u00e1hradn\u00ed tuk. D\u0159\u00edve \u010dokol\u00e1da mohla obsahovat maxim\u00e1ln\u011b p\u011bt procent n\u00e1hradn\u00edho rostlinn\u00e9ho tuku. Dnes takov\u00e9 omezen\u00ed neplat\u00ed. Levn\u00e9 \u201e\u010dokol\u00e1dy\u201c, ty\u010dinky a polevy sice obsahuj\u00ed kakaov\u00fd pr\u00e1\u0161ek, ale jejich hlavn\u00ed slo\u017ekou je \u0159epn\u00fd cukr a m\u00edsto kakaov\u00e9ho m\u00e1sla jsou jejich sou\u010d\u00e1st\u00ed levn\u00e9 rostlinn\u00e9 tuky, nej\u010dast\u011bji kokosov\u00fd nebo palmov\u00fd, kter\u00e9 maj\u00ed pro na\u0161e zdrav\u00ed nev\u00fdhodn\u00e9 slo\u017een\u00ed (obsahuj\u00ed nasycen\u00e9 mastn\u00e9 kyseliny, kter\u00e9 zvy\u0161uj\u00ed riziko vzniku srde\u010dn\u011b-c\u00e9vn\u00edch onemocn\u011bn\u00ed). Na rozd\u00edl od \u010dokol\u00e1dy m\u00edvaj\u00ed i nevalnou chu\u0165. Podobn\u00e9 sladkosti mus\u00ed b\u00fdt ozna\u010deny nap\u0159\u00edklad jako kakaov\u00e1 pochoutka, cukrovinka nebo poleva, ale nikoliv jako \u010dokol\u00e1da. Je proto dobr\u00e9 \u010d\u00edst slo\u017een\u00ed na obalech v\u00fdrobk\u016f. Kdy\u017e bude na prvn\u00edm m\u00edst\u011b uveden rostlinn\u00fd tuk, cukr a kakaov\u00fd pr\u00e1\u0161ek, nejedn\u00e1 se o \u010dokol\u00e1du. Mezi ne\u017e\u00e1douc?? \u00fa\u010dinky pt\u0159\u00ed hlavn\u011b bolesti \u017ealudku, p\u00e1len\u00ed \u017e\u00e1hy a\u017e \u017ealude\u010dn\u00ed v\u0159edy, bu\u0161en\u00ed srdce a p\u0159\u00edli\u0161 velk\u00e9 zrychlen\u00ed srde\u010dn\u00ed \u010dinnosti, infarkt.
