Historie pou\u017e\u00edv\u00e1n\u00ed k\u00e1vy k lidsk\u00e9 spot\u0159eb\u011b je op\u0159edena mnoha legendami. Nejzn\u00e1m\u011bj\u0161\u00ed z nich hovo\u0159\u00ed o pastevci, jeho\u017e kozy v\u017edy v\u00fdrazn\u011b \u201eo\u017eily\u201c pot\u00e9, co okousaly ke\u0159e k\u00e1vovn\u00edku (latinsky Coffea). <\/span><\/div>\n<p><span style=\"color: #333333\">Plody k\u00e1vovn\u00edku jsou podobn\u00e9 t\u0159e\u0161ni, uvnit\u0159 plod\u016f se nach\u00e1zej\u00ed dv\u011b proti sob\u011b ulo\u017een\u00e1 zelen\u00e1 k\u00e1vov\u00e1 zrna.\u00a0<\/span><\/p>\n<p><span style=\"color: #333333\">Hn\u011bd\u00e1 barva vznik\u00e1 a\u017e\u00a0pra\u017een\u00edm k\u00e1vov\u00fdch zrn. P\u0159i pra\u017een\u00ed se sni\u017euje obsah vody, \u0161kroby se \u0161t\u011bp\u00ed na jednoduch\u00e9 cukry a cukry karamelizuj\u00ed. P\u0159i pra\u017een\u00ed tak\u00e9 vznik\u00e1 prchav\u00fd olej kofeol, kter\u00fd k\u00e1v\u011b d\u00e1v\u00e1 typick\u00e9 aroma. Po krat\u0161\u00edm pra\u017een\u00ed je k\u00e1va sv\u011btlej\u0161\u00ed a kyselej\u0161\u00ed, po del\u0161\u00edm tmav\u0161\u00ed a v\u00edce ho\u0159k\u00e1.<\/span><\/p>\n<p><span style=\"color: #333333\">Nejzn\u00e1m\u011bj\u0161\u00ed odr\u016fdy k\u00e1vovn\u00edku jsou Coffea arabika a Coffea robusta. Arabika je nejkvalitn\u011bj\u0161\u00ed odr\u016fdou k\u00e1vy, jej\u00ed\u017e chu\u0165 ovliv\u0148uje prost\u0159ed\u00ed a nadmo\u0159sk\u00e1 v\u00fd\u0161ka oblast\u00ed, ve kter\u00fdch se p\u011bstuje. Robusta m\u00e1 ho\u0159kou chu\u0165 a obsahuje v\u00edce kofeinu. Je to m\u00e9n\u011b kvalitn\u00ed k\u00e1va, tak\u017ee b\u00fdv\u00e1 levn\u011bj\u0161\u00ed. K\u00e1vovn\u00edk m\u00e1 prap\u016fvod v oblasti Kaffa v Etiopii, odtud se p\u0159es Jemen a Turecko dostal do Evropy. Ozna\u010den\u00ed pro k\u00e1vu zn\u00ed ve v\u011bt\u0161in\u011b jazyk\u016f podobn\u011b (Caffee, coffi, caf\u00e9, &#8230;) , li\u0161\u00ed se jen zp\u016fsoby p\u0159\u00edpravy. <\/span><\/p>\n<p><span style=\"color: #333333\">K\u00e1va je velmi v\u00fdznamn\u00fdm obchodn\u00edm artiklem. V mnoha zem\u00edch z\u016fst\u00e1v\u00e1 p\u0159\u00edprava a pop\u00edjen\u00ed k\u00e1vy d\u016fle\u017eitou sou\u010d\u00e1st\u00ed v\u0161ech spole\u010densk\u00fdch ud\u00e1lost\u00ed a\u017e ritu\u00e1lem. Nap\u0159\u00edklad v Turecku pr\u00fd d\u0159\u00edve mu\u017ei p\u0159i svatebn\u00edm ob\u0159adu slibovali, \u017ee v\u017edy dop\u0159ej\u00ed man\u017eelce dostatek k\u00e1vy. Odp\u00edr\u00e1n\u00ed \u010di nedostatek k\u00e1vy byly n\u00e1sledn\u011b d\u016fvodem k rozvodu. <\/span><\/p>\n<p><span style=\"color: #333333\">K\u00e1va je obl\u00edben\u00e1 pro svou nezam\u011bnitelnou naho\u0159klou\u00a0chu\u0165 (v\u00fdsledn\u00e1 chu\u0165 z\u00e1vis\u00ed na odr\u016fd\u011b, zp\u016fsobu p\u011bstov\u00e1n\u00ed, pra\u017een\u00ed, na kvalit\u011b vody i na zp\u016fsobu p\u0159\u00edpravy, v\u010detn\u011b hrubosti umlet\u00e9 k\u00e1vy) a aroma, stejn\u011b jako pro v\u00fdrazn\u00e9 povzbudiv\u00e9 \u00fa\u010dinky, kter\u00e9 j\u00ed d\u00e1v\u00e1 alkaloid <span class='tooltipsall tooltipsincontent classtoolTips296'>kofein<\/span> obsa\u017een\u00fd mimo jin\u00e9 i v kakau, \u010dokol\u00e1d\u011b, \u010daji,\u00a0kolov\u00fdch a n\u011bkter\u00fdch energetick\u00fdch n\u00e1poj\u00edch (\u0161\u00e1lek k\u00e1vy obsahuje pr\u016fm\u011brn\u011b 100-200 mg kofeinu, \u0161\u00e1lek \u010dern\u00e9ho \u010daje asi 70 mg). <span class='tooltipsall tooltipsincontent classtoolTips296'>kofein<\/span> zvy\u0161uje krevn\u00ed tlak a stimuluje centr\u00e1ln\u00ed nervovou soustavu, \u010d\u00edm\u017e pom\u00e1h\u00e1 udr\u017eet pozornost a odd\u00e1lit \u00fanavu. P\u0159i po\u017eit\u00ed p\u0159ed span\u00edm sni\u017euje kvalitu sp\u00e1nku. Mimo to <span class='tooltipsall tooltipsincontent classtoolTips296'>kofein<\/span> zvy\u0161uje sekreci \u017ealude\u010dn\u00edch \u0161\u0165\u00e1v a m\u00e1 mo\u010dopudn\u00e9 \u00fa\u010dinky. \u00da\u010dinek kofeinu v \u010daji je &#8211;\u00a0 pravd\u011bpodobn\u011b s ohledem na dal\u0161\u00ed p\u0159\u00edtomn\u00e9 l\u00e1tky &#8211; m\u00edrn\u011bj\u0161\u00ed, ale trv\u00e1 d\u00e9le.<\/span><\/p>\n<p><span style=\"color: #333333\">K\u00e1va je k dost\u00e1n\u00ed zrnkov\u00e1 (nemlet\u00e1), mlet\u00e1 <span class='tooltipsall tooltipsincontent classtoolTips259'>vakuov\u011b<\/span> balen\u00e1 nebo <span class='tooltipsall tooltipsincontent classtoolTips200'>instantn\u00ed<\/span>.
