{"id":701,"date":"2009-10-15T13:54:37","date_gmt":"2009-10-15T11:54:37","guid":{"rendered":"https:\/\/viscojis.cz\/teens\/2009\/10\/15\/98\/"},"modified":"2024-11-07T13:57:13","modified_gmt":"2024-11-07T12:57:13","slug":"98","status":"publish","type":"post","link":"https:\/\/viscojis.cz\/teens\/98\/","title":{"rendered":"Glutam\u00e1t sodn\u00fd II"},"content":{"rendered":"<p><span style=\"color: #003399\"><span style=\"background-color: #888888\"><span style=\"background-color: #ffffff\">Co je glutam\u00e1t sodn\u00fd a jak je to s jeho vlivem na na\u0161e zdrav\u00ed.<\/span><\/span><\/span><\/p>\n<p>Kyselina glutamov\u00e1, od kter\u00e9 je glutam\u00e1t odvozen a p\u0159es kterou se tak\u00e9 v\u3000t\u011ble p\u0159em\u011b\u0148uje, je pro lidsk\u00e9 t\u011blo nezbytn\u00e1 \u2013 \u00fa\u010dastn\u00ed se p\u0159em\u011bny b\u00edlkovin a tuk\u016f, je nepostradateln\u00e1 pro p\u0159enos nervov\u00fdch vzruch\u016f. Dokonce se uva\u017euje i o pou\u017eit\u00ed kyseliny glutamov\u00e9 p\u0159i l\u00e9\u010db\u011b nemoc\u00ed, nap\u0159\u00edklad epilepsie, poruch chov\u00e1n\u00ed nebo Parkinsonovy choroby. Svou \u00falohu by mohla m\u00edt i p\u0159i l\u00e9\u010db\u011b \u017ealude\u010dn\u00edch v\u0159ed\u016f.<\/p>\n<p>Je tedy logick\u00e9, \u017ee ani glutam\u00e1t sodn\u00fd nen\u00ed s\u00e1m o sob\u011b pro lidsk\u00fd organizmus \u017e\u00e1dnou nebezpe\u010dnou nebo cizorodou l\u00e1tkou. Hlavn\u00ed probl\u00e9m spo\u010d\u00edv\u00e1 v\u3000mno\u017estv\u00ed <span class='tooltipsall tooltipsincontent classtoolTips199'>glutam\u00e1tu<\/span>, se kter\u00fdm se v\u3000potrav\u011b setk\u00e1v\u00e1me.<\/p>\n<p>Hlavn\u011b citliv\u011bj\u0161\u00ed jedinci mohou m\u00edt po konzumaci v\u011bt\u0161\u00edho mno\u017estv\u00ed <span class='tooltipsall tooltipsincontent classtoolTips199'>glutam\u00e1tu<\/span> sodn\u00e9ho bolesti hlavy, nevolnost a\u017e zvracen\u00ed, ztuhlost sval\u016f, tlak na prsou, pot\u00ed\u017ee s d\u00fdch\u00e1n\u00edm, u astmatik\u016f m\u016f\u017ee doj\u00edt i k\u3000astmatick\u00e9mu z\u00e1chvatu. M\u00e9n\u011b \u010dast\u00e9 jsou poruchy vn\u00edm\u00e1n\u00ed a\u017e halucinace, p\u00e1len\u00ed na\u3000zadn\u00ed \u010d\u00e1sti krku, ospalost. Pokud se po konzumaci potravin s\u3000glutam\u00e1tem nec\u00edt\u00edte dob\u0159e, je l\u00e9pe se jim vyh\u00fdbat nebo jejich pou\u017e\u00edv\u00e1n\u00ed v\u00fdrazn\u011b omezit, mo\u017en\u00e1 jste pr\u00e1v\u011b vy na tuto l\u00e1tku citliv\u00ed.<\/p>\n<p>\u00a0<\/p>\n<p>Laboratorn\u00ed pokusy prok\u00e1zaly negativn\u00ed vliv <span class='tooltipsall tooltipsincontent classtoolTips199'>glutam\u00e1tu<\/span> na mozkov\u00e9 bu\u0148ky, bu\u0148ky o\u010dn\u00ed s\u00edtnice, po\u0161kozen\u00ed plodu a zv\u00fd\u0161en\u00fd v\u00fdskyt potrat\u016f u pokusn\u00fdch zv\u00ed\u0159at. U \u010dlov\u011bka ale \u017e\u00e1dn\u00fd z\u3000t\u011bchto z\u00e1va\u017en\u00fdch \u00fa\u010dink\u016f opakovan\u011b prok\u00e1z\u00e1n nebyl. \u00da\u010dinky <span class='tooltipsall tooltipsincontent classtoolTips199'>glutam\u00e1tu<\/span> byly a jsou st\u00e1le p\u0159edm\u011btem v\u00fdzkumu.<strong>\u00a0<\/strong><\/p>\n<p>\u00a0<\/p>\n<p><strong>Kolik <span class='tooltipsall tooltipsincontent classtoolTips199'>glutam\u00e1tu<\/span> m\u016f\u017eeme bez obav sn\u00edst?<\/strong><\/p>\n<p>V minulosti bylo v \u010cR pou\u017e\u00edv\u00e1n\u00ed <span class='tooltipsall tooltipsincontent classtoolTips199'>glutam\u00e1tu<\/span> sodn\u00e9ho v\u3000potravin\u00e1ch omezov\u00e1no pr\u00e1vn\u00edmi p\u0159edpisy. V\u3000d\u011btsk\u00e9 v\u00fd\u017eiv\u011b ur\u010den\u00e9 d\u011btem do 3 let se nesm\u011bl pou\u017e\u00edvat v\u016fbec. B\u011bhem posledn\u00edch dvou des\u00edtek let byla provedena \u0159ada <span class='tooltipsall tooltipsincontent classtoolTips37'>studi\u00ed o vlivu <span class='tooltipsall tooltipsincontent classtoolTips199'>glutam\u00e1tu<\/span><\/span> na lidsk\u00e9 zdrav\u00ed. V\u3000dne\u0161n\u00ed dob\u011b je pr\u00e1vn\u00ed omezen\u00ed pou\u017eit\u00ed E 621 v potravin\u00e1\u0159stv\u00ed zm\u00edrn\u011bno. Glutam\u00e1t nen\u00ed alergenem, ani karcinogenem (l\u00e1tkou zp\u016fsobuj\u00edc\u00ed nebo napom\u00e1haj\u00edc\u00ed vyvolat rakovinu). Podle ofici\u00e1ln\u00edho stanoviska Americk\u00e9ho \u00fa\u0159adu pro kontrolu potravin a l\u00e9\u010div (Food and Drug Administration &#8211; FDA) je bezpe\u010dn\u00fd i pro t\u011bhotn\u00e9 a koj\u00edc\u00ed \u017eeny i pro d\u011bti. Ov\u0161em \u2026<\/p>\n<p>\u00a0<\/p>\n<p>Plat\u00ed, \u017ee \u010d\u00edm ni\u017e\u0161\u00ed v\u011bk, t\u00edm v\u011bt\u0161\u00ed opatrnost je na m\u00edst\u011b. D\u011btsk\u00fd organizmus je mnohem vn\u00edmav\u011bj\u0161\u00ed ne\u017e dosp\u011bl\u00fd a p\u0159\u00edpadn\u00e1 ne\u017e\u00e1douc\u00ed reakce m\u016f\u017ee b\u00fdt bou\u0159liv\u011bj\u0161\u00ed, zejm\u00e9na u astmatik\u016f. Nav\u00edc potraviny s vysok\u00fdm obsahem E 621 jsou obvykle pro d\u011bti a dosp\u00edvaj\u00edc\u00ed nevhodn\u00e9 kv\u016fli celkov\u00e9mu slo\u017een\u00ed. M\u00edvaj\u00ed \u010dasto n\u00edzkou v\u00fd\u017eivovou hodnotu &#8211; vysok\u00fd obsah <span class='tooltipsall tooltipsincontent classtoolTips146'>nasycen\u00fdch tuk\u016f<\/span>, soli, konzervant\u016f a barviv, naopak nedostatek kvalitn\u00edch b\u00edlkovin, vitamin\u016f a stopov\u00fdch prvk\u016f.Chu\u0165ov\u00e9 bu\u0148ky si tak\u00e9 zbyte\u010dn\u011b zvykaj\u00ed na v\u00fdrazn\u011bji slanou chu\u0165, co\u017e je pro celo\u017eivotn\u00ed stravov\u00e1n\u00ed nevhodn\u00e9 a nezdrav\u00e9. Tak\u00e9 dosp\u011bl\u00ed by m\u011bli potraviny s\u3000vy\u0161\u0161\u00edm obsahem <span class='tooltipsall tooltipsincontent classtoolTips199'>glutam\u00e1tu<\/span> j\u00edst jen v\u3000rozumn\u00e9m mno\u017estv\u00ed. Vzhledem k\u3000obsahu sod\u00edku (12 %) by p\u0159\u00edjem <span class='tooltipsall tooltipsincontent classtoolTips199'>glutam\u00e1tu<\/span> m\u011bli omezit i lid\u00e9 s\u3000vysok\u00fdm krevn\u00edm tlakem.<\/p>\n<p>\u00a0<\/p>\n<p>Pokud chcete omezit pou\u017e\u00edv\u00e1n\u00ed <span class='tooltipsall tooltipsincontent classtoolTips199'>glutam\u00e1tu<\/span> co nejv\u00edce, na trhu existuje \u0159ada v\u00fdrobk\u016f, kter\u00e9 nahrazuj\u00ed b\u011b\u017en\u011b pou\u017e\u00edvan\u00e9 potraviny s\u3000glutam\u00e1tem.
