Ale v\u00edme, co j\u00edme?<\/span><\/p>\n<p><span style=\"color: #3366cc\"><img loading=\"lazy\" decoding=\"async\" style=\"float: left\" src=\"https:\/\/viscojis.cz\/teens-files\/stories\/jak_kde\/burger.jpg\" alt=\"burger\" width=\"101\" height=\"78\" \/><\/span><\/p>\n<p>Rychle, levn\u011b a pohodln\u011b. I takto m\u016f\u017eeme charakterizovat sou\u010dasn\u00fd modern\u00ed zp\u016fsob ve\u0159ejn\u00e9ho stravov\u00e1n\u00ed. Fast foodov\u00e9 j\u00eddlo (p\u0159elo\u017eeno doslova rychl\u00e9 j\u00eddlo) je u\u0161it\u00e9 na m\u00edru dne\u0161n\u00edmu usp\u011bchan\u00e9mu \u017eivotn\u00edmu stylu. Rychle p\u0159ipraveno, je\u0161t\u011b rychleji p\u0159ed\u00e1no z\u00e1kazn\u00edkovi a \u010dasto i\u00a0 rychle sn\u011bdeno (ve stoje, v aut\u011b\u00a0 nebo za pochodu), a v\u011bt\u0161inou to ani (za) moc nestoj\u00ed.<\/p>\n<p>\u00a0<\/p>\n<p><strong>Co je Fast food?<\/strong><\/p>\n<p>Pravd\u011bpodobn\u011b jedna z prvn\u00edch dolo\u017een\u00fdch definic byla zaznamen\u00e1na ji\u017e v roce 1951 ve slovn\u00edku <span class='tooltipsall tooltipsincontent classtoolTips135'>Merriam-Webster<\/span>. Pod slovn\u00edm spojen\u00edm <em>fast food<\/em> je zde uvedeno: \u201epokrm, kter\u00fd je rychle p\u0159ipraven a naserv\u00edrov\u00e1n\u201c a je \u201erychle dostupn\u00fd \u010di p\u0159ipraven\u00fd ke konzumaci, s mal\u00fdm d\u016frazem na kvalitu.\u201c<\/p>\n<p>U n\u00e1s byly d\u0159\u00edve fast foodov\u00e9 pokrmy b\u011b\u017en\u011b k dost\u00e1n\u00ed ve st\u00e1nc\u00edch s rychl\u00fdm ob\u010derstven\u00edm (nap\u0159\u00edklad klasika p\u00e1rek v rohl\u00edku) a v posledn\u00edch letech se velice roz\u0161\u00ed\u0159ily restaurace fast foodov\u00fdch mezin\u00e1rodn\u00edch \u0159et\u011bzc\u016f \u010di jejich \u010desk\u00e9 verze. Pro fast foodov\u00e9 restaurace je typick\u00e1 jejich rychl\u00e1 kuchyn\u011b s p\u0159edem p\u0159ipraven\u00fdmi j\u00eddly, kter\u00e1 si z\u00e1kazn\u00edk m\u016f\u017ee zabalen\u00e1 odn\u00e9st sebou, a s \u017e\u00e1dnou nebo jen minim\u00e1ln\u00ed obsluhou.<\/p>\n<p>\u00a0<\/p>\n<p><strong>Co je vy\u010d\u00edt\u00e1no fast foodov\u00fdm pokrm\u016fm?<\/strong><\/p>\n<p>Fast foodov\u00e1 j\u00eddla jsou v sou\u010dasnosti podrobov\u00e1na velk\u00e9 kritice. Na jedn\u00e9 stran\u011b se jim vyt\u00fdkaj\u00ed velk\u00e9 porce, p\u0159\u00edli\u0161 mnoho energie, <span class='tooltipsall tooltipsincontent classtoolTips235'>sacharid\u016f<\/span>, tuk\u016f, <span class='tooltipsall tooltipsincontent classtoolTips188'>cholesterolu<\/span>, fosforu (kolov\u00e9 limon\u00e1dy) a sod\u00edku. Na stran\u011b druh\u00e9 n\u00edzk\u00fd obsah <span class='tooltipsall tooltipsincontent classtoolTips219'>vl\u00e1kniny<\/span>, vitamin\u016f, miner\u00e1ln\u00edch l\u00e1tek, ale tak\u00e9 b\u00edlkovin. V neprosp\u011bch hraje tak\u00e9 vysok\u00fd <span class='tooltipsall tooltipsincontent classtoolTips114'>glykemick\u00fd index<\/span> n\u011bkter\u00fdch fast foodov\u00fdch v\u00fdrobk\u016f (b\u00edl\u00e9 pe\u010divo, hranolky, Coca Cola).<\/p>\n<p>Vy\u0161\u0161\u00ed energetick\u00fd p\u0159\u00edjem z fast foodov\u00fdch v\u00fdrobk\u016f jde ruku v ruce s mno\u017estv\u00edm <span class='tooltipsall tooltipsincontent classtoolTips235'>sacharid\u016f<\/span> a tuk\u016f v nich obsa\u017een\u00fdch. Ze <span class='tooltipsall tooltipsincontent classtoolTips235'>sacharid\u016f<\/span> jsou problematick\u00e9 zejm\u00e9na <strong>jednoduch\u00e9 cukry<\/strong>, nejv\u00edce <span class='tooltipsall tooltipsincontent classtoolTips198'>sachar\u00f3za<\/span>. <span class='tooltipsall tooltipsincontent classtoolTips198'>sachar\u00f3za<\/span> poch\u00e1z\u00ed z \u0159epy a chemicky se jedn\u00e1 o prakticky \u010distou l\u00e1tku, bez vitamin\u016f a dal\u0161\u00edch t\u011blu prosp\u011b\u0161n\u00fdch l\u00e1tek. Je obsa\u017eena v pe\u010divu, sladkostech a mj. tak\u00e9 ve slazen\u00fdch nealkoholick\u00fdch n\u00e1poj\u00edch. Jednoduch\u00e9 cukry jsou \u0161kodliv\u00e9, pokud jsou p\u0159ij\u00edm\u00e1ny v nadbytku, nebo\u0165 zvy\u0161uj\u00ed p\u0159\u00edvod energie. Vy\u0161\u0161\u00ed obsah tuk\u016f s nevhodn\u00fdm slo\u017een\u00edm je dal\u0161\u00ed velk\u00e9 minus fast foodu. <strong>Tuky<\/strong> obsahuj\u00ed dvakr\u00e1t v\u00edce energie ne\u017e cukry a jejich slo\u017een\u00ed ur\u010duje jejich vliv na na\u0161e zdrav\u00ed. Obsahuj\u00ed mastn\u00e9 kyseliny \u2013 nasycen\u00e9, nenasycen\u00e9 a trans mastn\u00e9. <strong>Nasycen\u00e9 a <span class='tooltipsall tooltipsincontent classtoolTips66'>trans mastn\u00e9 kyseliny<\/span><\/strong> maj\u00ed negativn\u00ed vliv na zdrav\u00ed, zat\u00edmco nenasycen\u00e9 jsou pro n\u00e1\u0161 organismus velmi prosp\u011b\u0161n\u00e9. Ve fast foodov\u00fdch pokrmech p\u0159eva\u017euj\u00ed <span class='tooltipsall tooltipsincontent classtoolTips146'>nasycen\u00e9 tuky<\/span> (hranolky, hamburgery) a \u010dasto jsou v nich obsa\u017eeny tak\u00e9 <span class='tooltipsall tooltipsincontent classtoolTips66'>trans mastn\u00e9 kyseliny<\/span>. Nav\u00edc <strong>sma\u017een\u00ed \u010di fritov\u00e1n\u00ed<\/strong> nepat\u0159\u00ed zrovna mezi nejvhodn\u011bj\u0161\u00ed \u00fapravy pokrm\u016f. V\u00fdrazn\u011b zvy\u0161uj\u00ed energetickou hodnotu hotov\u00e9ho pokrmu (nap\u0159\u00edklad hranolky obsahuj\u00ed n\u011bkolikan\u00e1sobn\u011b vy\u0161\u0161\u00ed mno\u017estv\u00ed energie ne\u017e p\u016fvodn\u00ed surovina brambory) a hroz\u00ed zde riziko p\u0159epalov\u00e1n\u00ed tuk\u016f. V d\u016fsledku <strong>p\u0159epalov\u00e1n\u00ed tuk\u016f<\/strong> se v potravin\u00e1ch vytv\u00e1\u0159ej\u00ed \u0161kodliv\u00e9 l\u00e1tky, kter\u00e9 po\u0161kozuj\u00ed zdrav\u00ed \u2013 nap\u0159\u00edklad potenci\u00e1ln\u00ed rakovinotvorn\u00e1 l\u00e1tka akrylamid a jeho metabolit glycidamid, kter\u00fd vznik\u00e1 v potravin\u00e1ch s vysok\u00fdm obsahem \u0161krobu, pokud jsou vystaveny vysok\u00e9 teplot\u011b (hranolky, chipsy).<\/p>\n<p>V neprosp\u011bch fast foodu hraje tak\u00e9 <strong>vysok\u00fd <\/strong><strong><span class='tooltipsall tooltipsincontent classtoolTips114'>glykemick\u00fd index<\/span><\/strong> sacharidov\u00fdch v\u00fdrobk\u016f (b\u00edl\u00e9 pe\u010divo, hranolky, Coca Cola). \u010c\u00edm vy\u0161\u0161\u00ed je <span class='tooltipsall tooltipsincontent classtoolTips114'>glykemick\u00fd index<\/span> potraviny, t\u00edm rychleji n\u00e1m stoupne hladina cukru v krvi, na co\u017e na\u0161e t\u011blo reaguje vyplaven\u00edm hormonu inzulinu, kter\u00fd cukr z krve odstran\u00ed, a to zp\u016fsob\u00ed op\u011btovnou pot\u0159ebu d\u00e1t si n\u011bco dobr\u00e9ho k sn\u011bdku. Proto \u010dlov\u011bk, kter\u00fd ve velk\u00e9 m\u00ed\u0159e konzumuje potraviny s vysok\u00fdm glykemick\u00fdm indexem, m\u00e1 \u010dast\u011bji hlad. Nav\u00edc dlouhodob\u011b zv\u00fd\u0161en\u00e1 hladina inzulinu v krvi je samostatn\u00fdm rizikov\u00fdm faktorem pro vznik kardiovaskul\u00e1rn\u00edch nemoc\u00ed. Seznam potravin a jejich glykemick\u00fdch index\u016f je k dispozici <a href=\"http:\/\/www.glycemicindex.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">zde<\/a>.<\/p>\n<p><strong>Sod\u00edk<\/strong> (Na+) je sou\u010d\u00e1st\u00ed kuchy\u0148sk\u00e9 soli (NaCl) a tvo\u0159\u00ed asi 40 % jej\u00ed hmotnosti, tzn., \u017ee 1 g soli obsahuje 0,4 g sod\u00edku. Za bezpe\u010dnou, zdrav\u00ed ne\u0161kodnou d\u00e1vku pro v\u011bt\u0161inu lid\u00ed je pova\u017eov\u00e1no 6 g soli denn\u011b. Pr\u016fm\u011brn\u00e1 spot\u0159eba v populaci obyvatel \u010cesk\u00e9 republiky ale \u010din\u00ed asi 15 g denn\u011b a fast foodov\u00fdm pokrm\u016fm s\u016fl rozhodn\u011b nechyb\u00ed, sp\u00ed\u0161e naopak. V\u00fdsledkem nadm\u011brn\u00e9 konzumace soli a sod\u00edku je vysok\u00fd krevn\u00ed tlak, srde\u010dn\u00ed selh\u00e1n\u00ed, mrtvice a v\u0161echny dal\u0161\u00ed zdravotn\u00ed probl\u00e9my spojen\u00e9 se zadr\u017eov\u00e1n\u00edm vody v t\u011ble (vznikaj\u00ed tak otoky, srdce se mus\u00ed v\u00edce nam\u00e1hat a zvy\u0161uje se krevn\u00ed tlak).<\/p>\n<p>\u00a0<\/p>\n<p><strong>Testov\u00e1n\u00ed fast foodov\u00fdch pokrm\u016f a n\u00e1poj\u016f<\/strong><\/p>\n<p>Nen\u00ed na \u0161kodu v\u011bd\u011bt, co j\u00edme. Jak to ale u fast food zjistit? Ne v\u0161ichni prodejci fast foodov\u00fdch v\u00fdrobk\u016f poskytuj\u00ed informace o tom, co jejich v\u00fdrobky obsahuj\u00ed. N\u011bkter\u00e9 velk\u00e9 nadn\u00e1rodn\u00ed fast foodov\u00e9 \u0159et\u011bzce sice nab\u00edzej\u00ed na sv\u00fdch internetov\u00fdch str\u00e1nk\u00e1ch informace o tom, co jejich v\u00fdrobky obsahuj\u00ed (mno\u017estv\u00ed energie, tuk\u016f, <span class='tooltipsall tooltipsincontent classtoolTips235'>sacharid\u016f<\/span>, b\u00edlkovin, soli, <span class='tooltipsall tooltipsincontent classtoolTips219'>vl\u00e1kniny<\/span>, n\u011bkdy i miner\u00e1ln\u00edch l\u00e1tek), ale m\u016f\u017eeme se na tyto informace spolehnout?<\/p>\n<p>V roce 2005 odhalila britsk\u00e1 organizace Which?, kter\u00e1 testovala fast foodov\u00e9 v\u00fdrobky, \u017ee n\u011bkter\u00e9 spole\u010dnosti poskytuj\u00ed nep\u0159esn\u00e9 informace o nutri\u010dn\u00edm obsahu v\u00fdrobk\u016f na sv\u00fdch webov\u00fdch str\u00e1nk\u00e1ch \u2013 testy prozradily mnohem vy\u0161\u0161\u00ed obsah energie, soli a <span class='tooltipsall tooltipsincontent classtoolTips146'>nasycen\u00fdch tuk\u016f<\/span> ne\u017e spole\u010dnosti uv\u00e1d\u011bly (n\u011bkter\u00e9 sal\u00e1ty spole\u010dnosti McDonald\u2019s a KFC obsahovaly v jedn\u00e9 porci v\u00edce ne\u017e 3 g soli, p\u0159i\u010dem\u017e doporu\u010den\u00fd denn\u00ed p\u0159\u00edjem soli by nem\u011bl p\u0159es\u00e1hnout 6 g).<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" style=\"float: right\" src=\"https:\/\/viscojis.cz\/teens-files\/stories\/zajimavosti\/parek%20s%20hortici.jpg\" alt=\"parek s hortici\" width=\"168\" height=\"154\" \/>Tak\u00e9 u n\u00e1s, jmenovit\u011b ve zdravotn\u00edm \u00fastavu v Ostrav\u011b, hodnotili vybran\u00e9 druhy fast foodov\u00fdch v\u00fdrobk\u016f. Vzali si na mu\u0161ku McDonald\u2019s, KFC a n\u011bkter\u00e9 men\u0161\u00ed v\u00fdrobce a prodejce. Nejv\u00edce energie obsahovaly hranolky ze st\u00e1nkov\u00e9ho prodeje (t\u00e9m\u011b\u0159 2000 kJ ve 100 g), tak\u00e9 v nich bylo nejv\u00edce tuku (30 %). O n\u011bco l\u00e9pe dopadly hranolky z KFC a McDonald\u2019s (v pr\u016fm\u011bru 1300 kJ a 17 % tuku ve 100 g). Velk\u00e9 mno\u017estv\u00ed <span class='tooltipsall tooltipsincontent classtoolTips235'>sacharid\u016f<\/span> bylo zji\u0161t\u011bno u hranolek, cheesburgeru, p\u00e1rku v rohl\u00edku a gyros sendvi\u010de (27 \u2013 40 g ve 100 g). Nejv\u00edce soli bylo v p\u00e1rku v rohl\u00edku ze st\u00e1nkov\u00e9ho prodeje (2 g), d\u00e1le v Mc Nugets Chicken od McDonald\u2019s\u00a0 a dr\u016fbe\u017e\u00edm hamburgeru z bufetu. V\u00fdsledky byly porovn\u00e1ny s denn\u00ed doporu\u010denou d\u00e1vkou pro ob\u011bd a sva\u010dinu ml\u00e1de\u017ee ve v\u011bku 11\u201318 let. A v\u00fdsledek? Jako ob\u011bd jsou pokrmy co se energie, <span class='tooltipsall tooltipsincontent classtoolTips235'>sacharid\u016f<\/span> a <span class='tooltipsall tooltipsincontent classtoolTips219'>vl\u00e1kniny<\/span> t\u00fd\u010de nedosta\u010duj\u00edc\u00ed, jako sva\u010dina jsou zdrojem nadm\u011brn\u00e9ho p\u0159\u00edvodu energie a tuk\u016f.<\/p>\n<p>\u00a0<\/p>\n<p><strong>Mal\u00e9 doporu\u010den\u00ed na z\u00e1v\u011br<\/strong><\/p>\n<p>Pokud jsou fast foodov\u00e9 pokrmy konzumov\u00e1ny m\u00edsto ob\u011bda, nen\u00ed od v\u011bci je doplnit porc\u00ed zeleniny \u010di ovoce nam\u00edsto hranolek a doplnit tak chyb\u011bj\u00edc\u00ed \u017eiviny. T\u0159eba v podob\u011b r\u016fzn\u00fdch m\u00edchan\u00fdch sal\u00e1t\u016f \u010di kusov\u00e9ho ovoce\/zeleniny \u2013 bez majon\u00e9zov\u00e9ho \u010di jin\u00e9ho energeticky vydatn\u00e9ho dressingu. Dal\u0161\u00ed mo\u017enost\u00ed je d\u00e1t si nam\u00edsto klasick\u00e9ho fast foodov\u00e9ho menu tzv. velk\u00e9 sal\u00e1ty (s dr\u016fbe\u017e\u00edm masem, se \u0161unkou, se s\u00fdrem, vejci apod.), jsou chud\u0161\u00ed na energii a tuky a obsahuj\u00ed v\u00edce t\u011blu prosp\u011b\u0161n\u00fdch l\u00e1tek.<\/p>\n<p>\u00a0<\/p>\n<p><strong>A je\u0161t\u011b mal\u00e1 perli\u010dka \u2026<\/strong><\/p>\n<p>M\u011bs\u00edc jen na hamburgerech \u2013 tak zn\u00ed upout\u00e1vka na dokument\u00e1rn\u00ed film \u201eSuper size me\u201c, kter\u00fd ukazuje, co by se stalo, kdybyste del\u0161\u00ed dobu nepoz\u0159eli nic jin\u00e9ho ne\u017e stravu z rychl\u00fdch ob\u010derstven\u00ed. Re\u017eis\u00e9r Morgan Spurlock se v n\u011bm po dobu jednoho m\u011bs\u00edce stravuje v\u00fdhradn\u011b v McDonald\u2019s, j\u00ed tam 3 j\u00eddla denn\u011b, p\u0159i\u010dem\u017e mus\u00ed vyzkou\u0161et v\u0161e, co je v nab\u00eddce. Vzhledem k jeho celkov\u00e9mu zdravotn\u00edmu a psychick\u00e9mu stavu jej po 14 dnech dokto\u0159i za\u010dnou p\u0159esv\u011bd\u010dovat, a\u0165 experiment ukon\u010d\u00ed. Nakonec nejde ani tak o to, \u017ee by Morgan extr\u00e9mn\u011b p\u0159ibral, za\u010dal v\u0161ak b\u00fdt zna\u010dn\u011b unaven\u00fd, podr\u00e1\u017ed\u011bn\u00fd a n\u00e1ladov\u00fd, riziko srde\u010dn\u00edho selh\u00e1n\u00ed se u n\u011bj zv\u00fd\u0161ilo na dvojn\u00e1sobek, sexu\u00e1ln\u00ed \u017eivot prakticky vymizel. Za\u010dal b\u00fdt na j\u00eddlech u McDonald\u2018s z\u00e1visl\u00fd, a pokud je nedostal, objevily se u n\u011bj t\u011b\u017ek\u00e9 bolesti hlavy. Trans mastn\u00e9 kyseliny jsou nenasycen\u00e9 a vznikaj\u00ed v potravin\u00e1ch hlavn\u011b b\u011bhem procesu tzv. ztu\u017eov\u00e1n\u00ed tuk\u016f. Potraviny je v\u0161ak obsahuj\u00ed i p\u0159irozen\u011b. V mal\u00e9m mno\u017estv\u00ed n\u00e1m ne\u0161kod\u00ed, ve v\u011bt\u0161\u00edm mohou p\u0159isp\u00edvat ke vzniku nemoc\u00ed srdce a c\u00e9v. U n\u00e1s jsou velk\u00fdm zdrojem trans mastn\u00fdch kyselin p\u0159edev\u0161\u00edm potravin\u00e1\u0159sk\u00e9 v\u00fdrobky vyroben\u00e9 s pou\u017eit\u00edm cukr\u00e1\u0159sk\u00fdch a peka\u0159sk\u00fdch margarin\u016f (koblihy, v\u00e1no\u010dky, tukov\u00e9 rohl\u00edky, \u2026) a potenci\u00e1ln\u011b v\u0161echny potraviny, kter\u00e9 maj\u00ed na obalu naps\u00e1no, \u017ee obsahuj\u00ed ztu\u017een\u00fd rostlinn\u00fd tuk.
