D\u016fvody pro to jsou v z\u00e1sad\u011b t\u0159i: riziko infek\u010dn\u00edch onemocn\u011bn\u00ed, p\u0159\u00edtomnost <span class='tooltipsall tooltipsincontent classtoolTips61'>termolabiln\u00edch toxin\u016f<\/span>\u00a0 (jed\u016f) a obsah tzv. antinutri\u010dn\u00edch slo\u017eek, kter\u00e9 n\u011bjak\u00fdm zp\u016fsobem sni\u017euj\u00ed v\u00fd\u017eivovou hodnotu potravin.<\/p>\n<p>Vzhledem k mo\u017en\u00fdm zdravotn\u00edm rizik\u016fm by se v\u011bt\u0161ina \u017eivo\u010di\u0161n\u00fdch potravin m\u011bla konzumovat a\u017e po tepeln\u00e9 \u00faprav\u011b. D\u0159\u00edve b\u00fdvalo zvykem p\u00edt \u010derstv\u011b nadojen\u00e9 ml\u00e9ko od dom\u00e1c\u00ed kravky nebo kozy, p\u0159ipravovaly se \u201ev\u00fd\u017eivn\u00e9 n\u00e1poje\u201c s rozm\u00edchan\u00fdm syrov\u00fdm vejcem a p\u0159i chudokrevnosti se pacient\u016fm pod\u00e1vala \u0161kr\u00e1ban\u00e1 syrov\u00e1 j\u00e1tra. Dnes je v \u010cR prodej <span class='tooltipsall tooltipsincontent classtoolTips133'>syrov\u00e9ho ml\u00e9ka<\/span>\u00a0 p\u0159\u00edmo spot\u0159ebitel\u016fm mo\u017en\u00fd pouze na farm\u011b, kde je produkov\u00e1no, tzv. prodej ze dvora. P\u0159i prodeji mus\u00ed b\u00fdt nav\u00edc spot\u0159ebitel upozorn\u011bn n\u00e1pisem: \u201eSyrov\u00e9 ml\u00e9ko p\u0159ed pou\u017eit\u00edm p\u0159eva\u0159it.\u201c Konzumace <span class='tooltipsall tooltipsincontent classtoolTips133'>syrov\u00e9ho ml\u00e9ka<\/span> je pova\u017eov\u00e1na za rizikovou, a\u010dkoli tepelnou \u00fapravou doch\u00e1z\u00ed ke sn\u00ed\u017een\u00ed mno\u017estv\u00ed vitamin\u016f. Tepelnou \u00fapravou se m\u011bn\u00ed tak\u00e9 chu\u0165ov\u00e9 vlastnosti ml\u00e9ka, to je ale ot\u00e1zka chu\u0165ov\u00fdch preferenc\u00ed, n\u011bkomu v\u00edc chutn\u00e1 ml\u00e9ko p\u0159ed tepelnou \u00fapravou, jin\u00e9mu po n\u00ed.\u00a0<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" style=\"text-align: right;width: 145px;float: right;height: 128px\" title=\"ryba\" src=\"https:\/\/viscojis.cz\/teens-files\/stories\/jak_kde\/ryba.jpg\" alt=\"ryba\" width=\"145\" height=\"128\" border=\"0\" hspace=\"5\" vspace=\"5\" \/>Konzumace syrov\u00e9ho masa, vnit\u0159nost\u00ed, ryb, mo\u0159sk\u00fdch plod\u016f a vajec je v sou\u010dasnosti pova\u017eov\u00e1na za vylo\u017een\u011b rizikovou kratochv\u00edli. Gurm\u00e1ni si p\u0159esto r\u00e1di pochutnaj\u00ed na <span class='tooltipsall tooltipsincontent classtoolTips110'>tatarsk\u00e9m bifteku<\/span>\u00a0 \u010dili tatar\u00e1ku.\u00a0Ze syrov\u00fdch ryb a mo\u0159sk\u00fdch plod\u016f se p\u0159ipravuje japonsk\u00e1 pochoutka <span class='tooltipsall tooltipsincontent classtoolTips313'>sushi<\/span>\u00a0(\u010dti su\u0161i), je\u017e je st\u00e1le obl\u00edben\u011bj\u0161\u00ed i v evropsk\u00fdch zem\u00edch. Mezi vyhled\u00e1van\u00e9 delikatesy pat\u0159\u00ed i syrov\u00e9 \u00fast\u0159ice.<\/p>\n<p>\u00a0<\/p>\n<p><strong>Jak\u00e1 jsou rizika konzumace syrov\u00fdch \u017eivo\u010di\u0161n\u00fdch potravin<\/strong>?<\/p>\n<ul>\n<li>\n<div>Syrov\u00e9 ml\u00e9ko a z n\u011bj vyroben\u00e9 ml\u00e9\u010dn\u00e9 v\u00fdrobky mohou obsahovat bakterie zp\u016fsobuj\u00edc\u00ed nap\u0159\u00edklad <a href=\"https:\/\/viscojis.cz\/teens\/8\/\" target=\"_blank\" rel=\"noopener noreferrer\">salmonel\u00f3zu<\/a>, <a href=\"https:\/\/viscojis.cz\/teens\/120\/\" target=\"_blank\" rel=\"noopener noreferrer\"><span class='tooltipsall tooltipsincontent classtoolTips196'>listeri\u00f3zu<\/span><\/a>, <a href=\"https:\/\/viscojis.cz\/teens\/9\/\" target=\"_blank\" rel=\"noopener noreferrer\">kampylobakteri\u00f3zu<\/a>, <span class='tooltipsall tooltipsincontent classtoolTips217'>brucel\u00f3zu<\/span>\u00a0 a tuberkul\u00f3zu.\u00a0<\/div>\n<\/li>\n<li>\n<div>Syrov\u00e9 ml\u00e9ko m\u016f\u017ee obsahovat i virus zp\u016fsobuj\u00edc\u00ed z\u00e1n\u011bt mozkov\u00fdch blan. Skot je \u010dast\u00fdm nositelem tohoto viru, i kdy\u017e zn\u00e1m\u011bj\u0161\u00ed je jeho p\u0159enos na \u010dlov\u011bka infikovan\u00fdm kl\u00ed\u0161t\u011btem.<\/div>\n<\/li>\n<li>\n<div>Syrov\u00e9 maso a vnit\u0159nosti mohou obsahovat nap\u0159. bakterie zp\u016fsobuj\u00edc\u00ed salmonel\u00f3zu\u00a0 a kampylobakteri\u00f3zu, nebo tak\u00e9 <span class='tooltipsall tooltipsincontent classtoolTips277'>parazity<\/span> jako jsou tasemnice, <span class='tooltipsall tooltipsincontent classtoolTips111'>svalovec sto\u010den\u00fd<\/span>, \u010di p\u016fvodce <a href=\"https:\/\/viscojis.cz\/teens\/65\/\" target=\"_blank\" rel=\"noopener noreferrer\">toxoplazm\u00f3zy<\/a>.\u00a0<\/div>\n<\/li>\n<li>\n<div>Syrov\u00e9 ryby mohou obsahovat nap\u0159. <span class='tooltipsall tooltipsincontent classtoolTips272'>motolice<\/span>\u00a0 nebo p\u016fvodce <span class='tooltipsall tooltipsincontent classtoolTips293'>cholery<\/span>.<\/div>\n<\/li>\n<li>\n<div>Syrov\u00e1 vejce velmi \u010dasto obsahuj\u00ed p\u016fvodce salmonel\u00f3zy\u00a0a kampylobakteri\u00f3zy.\u00a0<\/div>\n<\/li>\n<li>\n<div>P\u0159i nadm\u011brn\u00e9 konzumaci syrov\u00fdch ryb a mo\u0159sk\u00fdch plod\u016f m\u016f\u017ee v t\u011ble doj\u00edt k nedostatku <a href=\"https:\/\/viscojis.cz\/teens\/87\/\" target=\"_blank\" rel=\"noopener noreferrer\">vitaminu B1<\/a>. Obsahuj\u00ed toti\u017e <span class='tooltipsall tooltipsincontent classtoolTips280'>enzym<\/span> thiamin\u00e1zu, kter\u00fd vitamin B1 rozkl\u00e1d\u00e1.<\/div>\n<\/li>\n<li>\n<div>Vysok\u00fd p\u0159\u00edjem syrov\u00fdch vajec m\u016f\u017ee \u010dlov\u011bku zp\u016fsobit nedostatek vitaminu H. Syrov\u00fd b\u00edlek toti\u017e obsahuje b\u00edlkovinu avidin, kter\u00e1 br\u00e1n\u00ed vst\u0159eb\u00e1n\u00ed vitaminu H ve st\u0159ev\u011b.<\/div>\n<\/li>\n<\/ul>\n<p>\u00a0<\/p>\n<p><strong>Na co si d\u00e1t pozor?<\/strong><\/p>\n<ul>\n<li>\n<div>Neochutn\u00e1vat b\u011bhem kuchy\u0148sk\u00e9 p\u0159\u00edpravy slanost a ko\u0159en\u011bnost syrov\u00fdch sm\u011bs\u00ed mlet\u00fdch mas, nap\u0159\u00edklad na sekanou a karban\u00e1tky.\u00a0<\/div>\n<\/li>\n<li>\n<div>Neochutn\u00e1vat syrov\u00e1 t\u011bsta na pe\u010den\u00ed a sm\u011bsi mlet\u00fdch mas, do kter\u00fdch se p\u0159id\u00e1vaj\u00ed vejce.<\/div>\n<\/li>\n<li>\n<div>Nep\u0159ipravovat dom\u00e1c\u00ed majon\u00e9zu, kr\u00e9my do mou\u010dn\u00edk\u016f a cukrov\u00ed ze syrov\u00fdch vajec, polevy ze syrov\u00fdch b\u00edlk\u016f apod.<\/div>\n<\/li>\n<li>\n<div>Pozor je pot\u0159eba d\u00e1t na ve\u0161kerou manipulaci s t\u011bmito syrov\u00fdmi surovinami, je nutno zabr\u00e1nit styku syrov\u00fdch surovin s potravinami, kter\u00e9 se ji\u017e nebudou tepeln\u011b zpracov\u00e1vat. Problematick\u00e1 je i \u201e<a href=\"https:\/\/viscojis.cz\/teens\/30\/\" target=\"_blank\" rel=\"noopener noreferrer\">k\u0159\u00ed\u017eov\u00e1 kontaminace<\/a>\u201c, kdy se nap\u0159\u00edklad na jednom prk\u00e9nku nap\u0159ed naklep\u00e1vaj\u00ed \u0159\u00edzky a pot\u00e9 porcuje uva\u0159en\u00fd knedl\u00edk.
